Oven-Roasted Bell Peppers (Peeled)

Whole bell peppers roasted in the oven and then peeled, a meltingly tender base for salads, sauces and soups.

The skin blisters, the juices caramelize and the vibrant colors deepen. In the oven, the flesh becomes tender, almost confit-like. These whole peppers, roasted and then peeled, can be added to a salad, sauce or soup. Just three steps are needed: roast them whole on a rack at 220 °C for about 45 minutes, let them cool for around fifteen minutes, then remove the skin, membranes and seeds. This recipe joins my collection of keto dishes.

Roasted and peeled bell peppers: the basics

Roasting means exposing the pepper to high, steady heat until its skin blisters, wrinkles and lifts away, sometimes blackening where the heat is most intense. Once the pepper has cooled slightly, remove this softened outer layer and the inner membranes that hold the seeds. The pepper stays whole during cooking: wash it, dry it and leave the stem on to make handling easier, only cutting it into strips after peeling.

Allow 1 bell pepper per serving. Olive oil is mainly used for storage and, if needed, for dressing just before serving. After roasting, the crunch of the raw pepper gives way to meltingly tender flesh with a mellower flavor and roasted notes.

A simple technique

Roasting a whole pepper before peeling concentrates its aromas, mellows its flavor and helps loosen the skin thanks to the moisture inside the vegetable. At 220 °C, the pepper gradually collapses, its juices may run out, and its skin wrinkles and then loosens. After cooking, let it cool slightly uncovered, without placing it in a covered container. The result is a versatile base for a warm or cold salad, a side dish, a blended sauce or a soup.

Ingredients and cooking guidelines

Choose a firm, smooth pepper with no damaged areas; red and yellow peppers have sweeter flesh, while green ones retain a grassy note. Use olive oil to cover the peeled pieces in a clean container, or drizzle it over them when serving. No special ingredients are needed: success comes down to three things, roast them whole, let them cool slightly and handle them gently.

Allow 45 minutes in the oven at 220 °C, then around fifteen minutes of resting time before handling. The skin should be wrinkled and blistered, with a few blackened patches, but not black all over. Inside, the juices and steam remain very hot even when the surface feels lukewarm, which is why resting before peeling is important. A drip tray under the rack helps catch juices in the oven.

Serving, storage and nutrition

After peeling, gentle handling keeps the pieces intact. Serve them as they are, in a salad with a drizzle of olive oil, or alongside poultry, fish, grilled meat or eggs. They pair well with air fryer dishes, such as Vietnamese roast chicken, a fish fillet or chicken breasts, as well as tamagoyaki; blended, they add body to a sauce or soup.

For short-term storage, completely cover the peeled pieces with olive oil in a clean, sealed container, refrigerate promptly at no more than 4 °C and eat within 4 days. The oil does not sterilize them: low-acid vegetables stored in oil require care because of the risk of botulism. To keep them longer, freeze the peeled, seeded pieces, preferably without oil. Allow approximately 5 g of net carbs and 31 calories per serving, or 1 bell pepper.

  • Preheat the oven to 220 degrees Celsius.
  • Wash the bell pepper and dry it. Simply leave the stem attached so you can still pick up the pepper later.

  • Place the bell pepper on the oven rack (just as it is, without doing anything else). If desired, place aluminum foil on the bottom of the oven to catch any juices that drip down. Set the timer for 45 minutes.
  • Remove from the oven after 45 minutes and let cool. I used to put it in a sealed container or a saucepan with a lid at this point. Now I no longer do this, and I notice little difference.
  • It takes about a quarter of an hour before you can continue without burning your hands. Then peel the bell pepper and remove the membranes holding the seeds.
  • Eat straight away or add to a sauce or soup. To keep it longer, cover it completely with olive oil, then refrigerate.
