What are keto almond flour pancakes?
Here, a pancake is a large, golden, pan-cooked round, adapted to a very low-carb diet, with no sugar, wheat flour or baking powder. The eggs do most of the binding: as they cook, their proteins coagulate and bind the almond particles, without the elastic network of gluten. These pancakes belong to the modern low-carb recipe repertoire, which adapts breakfast without starchy ingredients. Whereas wheat-based versions rely on flour, baking powder, milk or buttermilk, and sugar, this one uses eggs for structure and almonds for body. Without baking powder, the batter does not rise much, and without added sugar, it highlights the mellow almond flavor and a slightly salty note.

The main ingredients
The almond flour, 75 g, is the dry base: it provides the main flavor and structure through its fine particles, giving a more fragile result than wheat flour; a fine grind makes a smoother batter, and almond meal and defatted almond flour do not absorb liquids in the same way. The almond milk, 150 ml, adds moisture and loosens the batter; preferably choose one with no added sugar. The 2 eggs act as a binder, providing softness and structure in the absence of gluten, and 2 pinches of salt enhance the flavor.
For cooking, use butter added in three batches, or coconut oil. For variations, try half a teaspoon of cookie or speculoos spice mix, half a teaspoon of Bourbon vanilla powder, 2 drops of almond extract or the zest of half a lemon. To finish, about half a tablespoon of Greek yogurt per pancake adds freshness and creaminess, or use a syrup made with sweetener or a little fruit coulis, taking the carbs into account.

Cooking, serving and storage
Allow 3 large pancakes for 2 people, thinner, flatter and more fragile than wheat-based ones. The edges may brown before the center sets: wait until the first side is firm enough before flipping. Preheat the pan well to help prevent tearing, start over medium-high heat, then lower it if they brown too quickly. A flat spatula makes flipping easier; cook for 2 to 3 minutes on the first side, then 1 to 2 on the other; the reliable signs are golden edges and a firm outer rim, not bubbles. Do not add wheat flour, baking powder or an extra egg to imitate the classic texture.
Let them cool first, then store in an airtight container with parchment paper between each pancake, for up to 3 days in the refrigerator. Avoid leaving them at room temperature and keep the toppings separate so they do not turn soggy; reheat gently in a pan, as microwaving gives a softer texture. According to the recipe, one serving provides approximately 297 kcal, with 2 to 5 g of net carbs depending on the brands used. On a French nutrition label, the carbohydrate figure already excludes fiber, so there is no need to subtract the fiber a second time.

Instructions
- Mix the almond flour with the salt. Add the milk and stir until there are no lumps. Add one egg and continue stirring. - Heat the frying pan over medium-high heat (setting six on an induction cooktop) and add the butter once the pan is hot. The heat can be considerably lower than for regular pancakes. The batter burns more quickly, but it also needs a little more time to set. Pour a spoonful (about one soup ladleful) into the pan.Butter or coconut oil
- Cook for at least two to three minutes on one side. The edges may already be turning lightly golden. This pancake is more fragile than a regular pancake; flipping it too soon may cause it to fall apart. Cook the other side for one to two minutes.
- Repeat for two more pancakes.
