What is an oven-roasted chicken leg?
A roasted chicken leg has deeply golden, crispy skin and tender meat around the bone. The high oven heat sears the surface, concentrates the juices and gives the vegetables roasted edges, without a barbecue. The chicken leg, preferably skin-on with a portion of the back attached, sits in the centre of the dish; around it, the pumpkin softens, the cooked beetroot adds an earthy sweetness and the rhubarb a distinct tartness.
The spice blend provides most of the flavour. Paprika adds colour and rounded flavour, ground coriander a citrusy note, cumin a deep warmth and chilli flakes a touch of heat. Dried oregano brings a herbal note to the vegetables. At 220 °C, the skin browns and releases fat that flavours the vegetables, while the rhubarb, added partway through cooking, softens without drying out.

A family classic with pumpkin, beetroot and rhubarb
A golden oven-roasted chicken leg is simple home cooking: crispy skin, hot rendered fat and peppery juices at the bottom of the dish. This version focuses on deeply golden skin, vegetables coated in spiced juices and cooking at 220 °C.
The basic approach remains practical, with a more unusual trio of vegetables. Pumpkin brings sweetness, cooked beetroot a deep red colour and earthy flavour, and rhubarb its fresh, vegetal tartness. You can cook the beetroot yourself or buy it precooked, often vacuum-packed in the produce section. Fresh rhubarb is mainly available in spring and early summer, only the stalks are used, and your butcher can cut a chicken leg with a portion of the back attached.
The main ingredients
The chicken leg provides juicy meat and skin to brown. Leaving the skin on protects the meat and releases fat that drips onto the vegetables; if it extends beyond the meat, spread it out in the dish to avoid soft folds. With 150 g of pumpkin, the vegetable accompaniment gains a meltingly tender texture: cut into chunks, it browns in the oven and absorbs the spiced juices, and its well-washed skin can be left on if it is organic.

The 100 g of cooked beetroot warms through and becomes coated in oil and chicken juices; drain it well before cutting so it does not make the vegetables soggy. One stalk of rhubarb provides the tart note: washed and chopped, it is added after the first 15 minutes of cooking, then tucked among the vegetables, where it softens. Its brightness balances the richness of the skin and the sweetness of the pumpkin.
The spices give the juices their colour and warmth: two teaspoons of paprika, two of ground coriander, one of ground cumin and one of chilli flakes. One teaspoon of dried oregano adds a herbal touch to the vegetables. A pinch of pink salt or sea salt, a pinch of black pepper and a drizzle of avocado, mild olive or high-oleic sunflower oil round out the seasoning.

Cooking tips and serving
Towards the end of cooking, keep an eye on the colour: if the skin or spices darken too quickly, cover the dish with a little aluminium foil. Serve the chicken leg on the roasted vegetables, with the spiced juices. This is a complete meal on its own, with the vegetables, juices and tartness of the rhubarb already complementing the meat; a green salad adds crunch. Refrigerate leftovers promptly in a sealed container and reheat until hot all the way through; using the oven helps keep the skin from softening. Each serving contains 13 g of net carbs.

Grilled Chicken Legs
Ingredients
- 1 chicken leg with rib portion attached preferably skin-on
- 150 g pumpkin
- 100 g beetroot cooked (freshly cooked or precooked)
- 1 stalk rhubarb
- 2 teaspoons paprika
- 2 teaspoons coriander seeds ground
- 1 teaspoon cumin seeds ground
- 1 teaspoon chilli flakes
- 1 teaspoon dried oregano
- a pinch Himalayan pink salt or Celtic sea salt
- a pinch black pepper
- a generous splash avocado oil, mild olive oil or high-oleic sunflower oil for cooking
Instructions
- Preheat the oven to 220 degrees.
- Mix the spices together, except for the oregano. Rub the chicken leg with a little oil. Then season with the spice mixture (do not use it all). Place in the centre of an ovenproof dish. - Cut the pumpkin into pieces. If using an organic pumpkin, you can leave the skin on (wash it well!); otherwise, remove it. Drain the beetroot and cut it into pieces.150 g pumpkin, 100 g beetroot
- Put everything in a mixing bowl, drizzle with a little oil and mix by hand. Arrange around the chicken leg in the ovenproof dish and sprinkle with the remaining spice mixture and the oregano.1 teaspoon dried oregano
- Place in the oven and set the timer for 15 minutes.
- Wash and chop the rhubarb. When the timer goes off, take the dish out of the oven and place the rhubarb pieces between the other vegetables. Press down gently so they sit between the vegetables rather than on top. Return to the oven for 15 minutes.1 stalk rhubarb
- Check (especially during the last 5 minutes) that everything is not cooking too quickly. Every oven is different, and if more hot air comes from above, the chicken skin may burn. If this happens and the pumpkin and rhubarb are cooked, take the dish out of the oven. Otherwise, cover the dish with some aluminium foil.
