Here, indulgence comes without flour, in a batter sweetened with erythritol and lightened with a whipped egg white. Allow 5 minutes of preparation and 20 of baking at 140 °C, or 25 minutes excluding resting time, for two small, meltingly soft cakes; extend the baking time to 25 minutes for a firmer texture, then let cool for 10 minutes before unmolding. What are keto lava muffins?
Small chocolate muffins with melting centers, a ketogenic version of individual lava cakes, baked in two small silicone molds. The molten effect comes from 10 g of reserved dark chocolate, broken into pieces and tucked into the center before baking, then covered with batter. The texture relies on dark chocolate, butter, raw cocoa powder, erythritol, a pinch of salt and a separated egg: the yolk adds richness, the whipped white provides lift without flour or baking powder, and the cocoa supplies the dry matter.
Gentle baking at 140 °C cooks the edges without overcooking the center; after about 10 minutes of resting, the cakes unmold more cleanly while retaining enough warmth for a soft texture. This version takes its inspiration from soft chocolate cakes and chocolate fondants, which aim for a contrast between a baked exterior and a softer center, but without flour, with erythritol replacing sugar and raw cocoa supporting the texture.

The main ingredients
40 g of dark chocolate set the tone, with about 30 g melted with the butter and 10 g reserved in pieces for the center; the label “dark” and the cocoa percentage alone do not guarantee a low sugar content. 30 to 35 g of butter add richness and softness, making it better suited than coconut oil because it is softer at room temperature; for a dairy-free version, use no more than about 30 g of coconut oil. One egg, with the yolk to bind and enrich, and the white whipped to stiff peaks to add air.
15 g of erythritol provide sweetness without added sugar, provided you check the ingredients; 15 g of raw cocoa powder intensify the flavor and supply the dry matter, unsweetened unlike drinking chocolate powders; a pinch of salt balances the bitterness of the cocoa and adds depth.

Tips for success, texture and serving
The chocolate base should be lukewarm: let the chocolate melted with the butter cool slightly before adding the yolk, so it does not cook too soon; the salt, erythritol and cocoa are mixed in to form a dark, dense batter. The egg white, whipped to stiff peaks in a clean, grease-free bowl, is essential; fold it in gently with a spatula without overmixing. Divide most of the batter between small silicone molds set inside a rigid baking pan, keeping two teaspoons aside, place the 10 g of chocolate in the center, then cover with the reserved batter.
Bake at 140 °C for 20 minutes for a melting center, or 25 for firmer cakes, with cooked, set edges and a still-soft center for the molten version; resting for about 10 minutes firms up the exterior and makes unmolding easier. Allow about 10 g of net carbs per cake, depending on the chocolate. Serve plain, or with a little unsweetened whipped cream or a few raspberries, counted separately. Once cooled, the center becomes less molten; reheating in short bursts in the microwave softens it, but avoid overdoing it, as the egg-rich crumb can become tough. Ingredients
- 40 g dark chocolate
- 30-35 g butter from grass-fed cows
- 1 egg
- 15 g erythritol
- 15 g raw cacao powder
- 1 pinch salt
Instructions

- Separate the egg white from the yolk. Add the yolk to the chocolate mixture. Beat the egg white with an electric mixer until stiff peaks form.1 egg
- Gently fold the egg white into the chocolate mixture using a spatula.
- Place small silicone molds inside a rigid baking pan. Divide most of the batter between the small molds. Reserve 2 generous teaspoonfuls.
- Break the remaining 10 grams of chocolate into small pieces and press them into the center of the batter. Then spoon the reserved teaspoonfuls of batter on top.
- Place in the oven. Bake for 20 minutes for a soft center. Bake for 25 minutes for firm little cakes. Let cool for about 10 minutes before removing them from the small molds.
