What is chocolate lava cake ?
Dark baking chocolate, butter, whole eggs, extra yolks, sugar, a little flour, and a pinch of salt. Chocolate lava cake is exactly what the name suggests : a cake with a liquid center. You may also see it called molten chocolate cake.
The magic lies in the contrast between the shell and the center. The outside sets into a thin crust, firm enough to hold its shape when unmolded ; inside, the cocoa butter stays fluid. The 40 g of flour are just enough to give it structure ; add more, and it turns into an ordinary chocolate cake.

Lava cake earned its place on bistro menus for one simple reason : it is served the moment it is ready, hot, dark, and barely holding together. Add a scoop of vanilla ice cream on the side, and the contrast does the rest.
The air fryer does not change the batter; it changes the scale. You get four portions in one basket instead of firing up a full-size oven, with heat that rises quickly and cooking timed to the minute.

Main ingredients of chocolate lava cake
120 g of 70 % dark baking chocolate deliver the flavor and the cocoa butter that makes the center silky. The 80 g of butter add richness, shine, and suppleness.
2 whole eggs provide the structure : as they set around the edges, they form the shell. The 2 extra yolks do something different, adding fat and emulsifying power for a creamier center. The 60 g of sugar soften the bitterness and keep the cake tender.
The flour should be sifted, and the pinch of salt wakes up the chocolate and balances the bitterness. The butter and unsweetened cocoa powder used to coat the ramekins do not go into the batter : they ensure clean unmolding and a deep, dark surface, without the pale dusting that flour can leave behind.
Technical tips
The ramekins have a big impact on the final result : 7 to 8 cm in diameter, fairly shallow, and filled only three-quarters full. Any taller, and the tops brown before the bases set.
Preheat to 180 °C and arrange them in a single layer, spaced apart and away from the heating element : the air needs to circulate around each one. The air fryer cooking chart gives useful benchmarks for other recipes.
Cook for 8 to 9 minutes without opening the basket. Each time you open it, the temperature drops and the contrast between the edges and the center becomes less distinct.
Doneness is visual : the edges should look matte and slightly pulled away from the ramekin, while the center remains glossy and jiggly. Slip a square of dark chocolate into the middle of the batter for an even more molten center.
Let them rest for 2 minutes before unmolding, just long enough for the shell to stabilize. Loosen the edges, invert, dust with powdered sugar, and serve.

Air Fryer Cooking
- Preheat the air fryer to 180°C.
- Place the ramekins in the basket, spaced apart, making sure they do not touch each other or the heating element.
- Cook for 8 to 9 minutes at 180°C without opening the basket. The edges should be set and the center should still wobble.
To Finish
- Let the cakes rest for 2 minutes. Run a knife around the inside edge of each ramekin, then invert onto plates and unmold.
