Warm flaxseed gives off a nutty aroma. The egg salad, perked up with pickle and chili flakes, brings creaminess, the iceberg crunch, and the serrano saltiness. Everything rolls up in a soft flaxseed flatbread, with no wheat tortilla. A lunch for one, ready in fifty minutes, including resting time. This recipe joins my collection of keto breads and doughs.
What is a keto flaxseed and egg salad wrap?
The way you roll a wrap stays the same, but the base changes: the flatbread is made from finely ground flaxseeds, hydrated with hot water and seasoned with salt, instead of wheat. The filling comes down to three elements: iceberg for freshness and crunch, serrano, a dry-cured ham, for saltiness, chew and real umami depth, and a creamy egg salad made with hard-boiled egg, mayonnaise, mustard, chives, pickle and chili.
It all comes down to hydrating the flaxseed: once ground and mixed with hot water, its mucilage forms a gel, enough to bind the dough without wheat or egg. When cooking, judge by how well it holds together rather than its color, since brown flaxseed is naturally dark: about two minutes per side, until the surface is set, then let it rest before filling. Laying the lettuce down first protects the flatbread from moisture, the ham goes on top, and the egg salad is spread over it before rolling.

An everyday keto creation
This wrap makes no claim to tradition: it is everyday keto cooking in a convenient, portable format, with the wheat tortilla giving way to a simple dough of ground flaxseed, hot water and salt, plus resting time. The filling brings together familiar ingredients: egg and mayonnaise for richness, mustard and pickle for acidity, chives for freshness, serrano for saltiness, and iceberg for crunch. Another ham, such as smoked ham, will work in a pinch, but should not be confused with serrano, which is dry-cured. As a single serving, it travels well if each component stays thoroughly chilled and separate until rolling.
The main ingredients
The flatbread starts with 50 g of flaxseeds ground as finely as possible, hydrated with 80 ml of very hot water to trigger gel formation, with two pinches of salt divided between the dough and the salad. Keep a spoonful of ground flaxseed for dusting if the dough sticks, and reserve the oil, whether avocado, mild olive or high-oleic sunflower, for greasing the pan, never for the dough.

The salad is built around one hard-boiled egg, a spoonful of mayonnaise for creaminess, Dijon mustard for a sharp kick, a small pickle to cut through the richness, a handful of chives and a spoonful of chili flakes. Japanese mayonnaise adds extra richness, and chive lovers can take a look at this chive blossom butter.
One slice of serrano brings saltiness, umami and chew; one leaf of iceberg adds crunch and protects the flatbread from moisture. Every element has a role: flaxseed provides structure, egg and mayonnaise make it satisfying, and pickle, chives, chili and iceberg keep everything lively. Working with the same egg-and-mayonnaise combination, deviled eggs also balance richness with seasoning, while quick chili oil offers another way to vary the heat.

Keto benefits and nutritional guidelines
The appeal of this wrap lies in its very low carbohydrate content and its richness in fiber and fat, which help keep you full: per serving, the flatbread alone provides 357 kcal, 15 g of protein, 28 g of fat, 14 g of fiber and 1 g of net carbs. With the filling, expect closer to 2 to 7 g depending on the seeds, condiments and how much of the flatbread you actually eat; on a French nutrition label, do not subtract fiber a second time. Serve with a green salad or raw vegetables, and use chili flakes cautiously, as you would sriracha sauce or sambal oelek.

Flaxseed Wrap with Egg Salad and Dry-Cured Ham (Keto)
Ingredients
- 50 g flaxseeds or ground flaxseeds
- 1 extra tablespoon flaxseeds or ground flaxseeds
- 80 ml water boiling or hot
- 1 egg
- 1 small gherkin
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard or smooth mustard
- 1 handful fresh chives
- 1 teaspoon chili flakes
- 1 slice Serrano ham or another smoked ham
- 1 leaf iceberg lettuce
- 2 generous pinches salt (Celtic sea salt)
- 1 small drop avocado oil, mild olive oil or high-oleic sunflower oil
Instructions
- Grind the flaxseeds as finely as possible. I use a small electric coffee grinder for this. Ready-ground flaxseeds also work.50 g flaxseeds
- Heat the water in a kettle or draw boiling water from a boiling-water tap.80 ml water
- Mix with the ground flaxseeds and salt. Leave to rest for half an hour.2 generous pinches salt (Celtic sea salt)
- Meanwhile, boil the egg in a small saucepan. Then run it under cold tap water.1 egg
- Place a piece of parchment paper on the work surface (at least as large as the diameter of the frying pan). If the dough is still very sticky: sprinkle a little ground flaxseed onto the parchment paper. Flatten the dough on it and place the second piece of parchment paper on top. Roll out with a rolling pin. The edges can be slightly uneven.1 extra tablespoon flaxseeds
- Remove the top piece of parchment paper. Press an upside-down bowl onto the dough. Remove the trimmings.
- Heat the frying pan. Add a few small drops of oil. Cook the wrap for about two minutes on each side. Leave to cool.1 small drop avocado oil, mild olive oil or high-oleic sunflower oil
- Chop the egg and the gherkin. Finely snip the chives. Mix the egg with the gherkin, chives, mayonnaise, mustard, salt, pepper and chili flakes.1 small gherkin, 1 handful fresh chives, 1 tablespoon mayonnaise, 1 teaspoon Dijon mustard or smooth mustard, 1 teaspoon chili flakes
