Warm, soft and delicately scented with almonds, this little bread comes out of its ramekin and slices easily, ready for butter, cream cheese or a few slices of avocado. Egg and almond butter replace wheat flour for a low-carb single serving. Cooking is very quick: 1 minute at 1 000 W, about 2 minutes at 600 W. This recipe is part of my collection of keto breads and doughs.

What is keto almond bread?

This microwave keto almond bread is a low-carb, single-serving recipe cooked directly in a microwave-safe ramekin. It uses dense, silky 100 % almond butter, combined with an egg, a little mild-flavored oil, a pinch of salt and cream of tartar-based baking powder.

The batter is made using a small whisk: mix the egg, almond butter and oil into a smooth base, then add the baking powder, salt and seasonings. As it heats, the baking powder makes the bread rise, the center firms up and the surface stays pale and soft. The crumb is tender and slightly airy, with just enough structure to slice after a few minutes of resting.

The origins of this version

This little bread belongs to the family of low-carb recipes designed to replace grain flours while keeping a base that is easy to spread with toppings. Instead of kneading and fermenting dough, you mix a base richer in protein and fat: the egg provides structure, the almond butter adds body, and the baking powder gives it lift.

The microwave is ideal for this quick format: a bowl or ramekin, a single serving and just a few moments of cooking. The crumb stays tender and compact, and the surface pale, without a golden crust. It fits right in with meals ready in 20 minutes, whether for a quick breakfast, a savory snack or a base for your favorite spread without turning on the oven.

The main ingredients

The egg forms the backbone of this little bread: it binds, adds moisture and gives it that soft texture that slices well once the steam has subsided. The 100 % almond butter adds richness, nutty flavor and fats that tenderize the crumb; if the oil has separated in the jar, stir well before measuring out the amount you need.

A mild-flavored oil, such as avocado, mild olive or high-oleic sunflower oil, helps prevent drying in the microwave and makes the crumb more tender. Cream of tartar-based baking powder makes the batter rise; distributing it evenly prevents pockets of powder and uneven rising. Salt brings out the almond flavor and balances the egg.

For flavor, add seasonings to suit the version you want. For a bold savory version, use oregano, thyme, chives, chili flakes, ground cumin or ground coriander; for a milder version, use cinnamon, ground cardamom and Bourbon vanilla, with no added sugar. Almond butter is available in health food stores, specialty aisles or some supermarkets; ideally, choose one with a simple ingredient list containing only almonds.

Cooking tips and serving

Cooking is quick but requires a little precision. At 1 000 W, 1 minute is generally enough; at 600 W, allow about 2 minutes, until the center is set with no liquid patches. The surface stays pale: do not cook it longer to try to form a crust, as this will mostly just toughen the crumb. A slight dip after cooking is normal; let it cool a little before unmolding or slicing, as the bread is fragile while hot and the steam can burn.
