Sugar-Free Iced Chocolate with Almond Milk

In the glass, ice cubes chill an already cold almond milk base, which the cacao quickly colors. The drink is icy and light, with the distinct bitterness of raw cacao softened by a few drops of stevia. A hint of cinnamon or vanilla rounds it out without making it heavy. It takes two minutes to prepare, using a blender and a large glass of ice cubes, for a chocolate break at 77 kcal per serving. Find this recipe among my keto drinks.

What is this iced chocolate?

Iced chocolate is a chocolate drink served very cold. Here, almond milk provides the plant-based base, and sugar-free means that no sugar is added, with sweetness coming from liquid stevia extract measured in drops. To prepare: blend 200 mL of almond milk with 2 tablespoons of raw cacao powder and 3 drops of stevia, then serve over a glass of ice cubes.

The result is fluid and refreshing, with an even chocolate color, although the cacao may settle slightly when left to stand. Serving matters as much as preparation: the ice cubes stay whole for an intense chill and gradual dilution, and a light foam may appear after blending. Choose unsweetened almond milk, as some plant-based drinks contain sugars; almonds are tree nuts and an allergen.

A plant-based version with no added sugar

Classic iced chocolate combines milk, cocoa or chocolate, and sugar, served very cold over ice. This version shifts the balance: almond milk replaces dairy milk, raw cacao powder provides intensity, and stevia adds sweetness without added sugar. It offers a plant-based base with no added sugar, preserving the cacao flavor without turning it into an overly rich dessert. Raw cacao has a bold flavor, a distinct bitterness, and a powder that adds color without thickening.

The ingredients and their roles

The almond milk, 200 mL, forms the liquid base, with a light nutty note; well chilled, it slows the melting of the ice cubes and preserves the intensity of the cacao. Unsweetened is best. The raw cacao powder provides the main flavor: two tablespoons give an even color and a pronounced taste, with the blender dispersing the particles to minimize dry clumps. An instant cocoa mix, often sweetened, would change the flavor and composition.

Liquid stevia extract is used in a very small quantity, 3 drops. Its sweetening power varies by brand, so measure carefully for restrained sweetness without an aftertaste. The ice cubes fill the glass and stay whole, slowly cooling and diluting the drink. Two optional additions to the blender: half a teaspoon of cinnamon for a spicy note, or three drops of vanilla extract to round out the sweetness, making sure no vanilla sugar is included.

Texture, serving and what to look for

The blender combines the drink evenly, disperses the cacao and gives it a consistent color: look for no dry clumps, an even shade and sometimes a light foam, with a fluid texture and no thickener or crushed ice. Serve in a large, tall glass wide enough to hold the ice cubes and the mixture. The drink needs nothing else; syrups, cookies or sweet toppings would add sugar, while cinnamon and vanilla remain simple accents.

Enjoy it straight away, well chilled and with the cacao still suspended in the liquid. To make it ahead, keep the mixture refrigerated in a sealed container without ice, then stir before serving and add the ice cubes at the last moment.
