A crisp, dry crunch, seeds with toasted notes, a briny hint of nori and the umami of soy sauce: these keto flaxseed crackers deliver distinct flavors without flour. They hold together thanks to flaxseed mucilage, the plant-based gel that forms when the seeds are hydrated. Each serving of three crackers provides 3 g of net carbs, perfect for serving with drinks or a thick spread. This recipe is part of my collection of keto breads and doughs.

What are flaxseed crackers?

In this keto version, the cracker is a thin, crisp savory biscuit made mostly from seeds. The traditional flour-based dough is replaced by a mixture of flaxseeds, pumpkin seeds and sesame seeds, enhanced with nori and carefully balanced seasonings. The flaxseeds and pumpkin seeds are crushed with a mortar and pestle or in a coffee grinder to help them absorb water.

After resting for about an hour with 175 ml of water, the flaxseeds release their mucilage, a gel that binds the mixture without eggs or flour; the sesame seeds, added whole afterward, retain their texture. The seasoning relies on soy sauce or tamari for saltiness and umami, sesame oil for a toasted note, finely sliced nori for a taste of the sea, ginger for warmth and chili flakes for a lively kick.

The idea behind this keto version

These crackers satisfy a common craving in low-carb cooking: keeping the crunch without flour-based dough. The partially ground seeds are bound by the flaxseed gel, then dried in the oven until firm and brittle.

The umami flavor comes from the nori, soy sauce or tamari, and sesame. Ginger, or galangal, provides a dry warmth, while chili adds heat without overpowering the seeds. The texture remains grainy, the crackers snap cleanly, and their uneven surface holds thick spreads that are low in sugar.

The main ingredients

The 100 g of flaxseeds form the base: once ground and hydrated, they release the mucilage that binds everything together, providing a nutty flavor and plenty of fiber. The 50 g of pumpkin seeds add structure and bite, partially ground with the flaxseeds while leaving small pieces to crunch on.

The 50 g of sesame seeds are left whole: they dot the surface, add crunch and reinforce the toasted notes, especially with the teaspoon of sesame oil. The two sheets of nori provide the briny note; slice them very finely, folding them several times before cutting to avoid large pieces. The 175 ml of water activates the flaxseed gel and makes the mixture pliable enough to spread out.

The teaspoon of soy sauce or tamari adds salt and umami; for a gluten-free version, check the label. The teaspoon of ground ginger, or galangal, adds a distinct warmth, and the chili flakes bring everything to life. A serving of three crackers contains 371 kcal and 3 g of net carbs, bearing in mind how energy-dense seeds are.

Technique tips and serving

An even thickness matters. Roll out an even layer between two sheets of parchment paper to about 20 × 30 cm; it will dry out better than a sheet that is thicker in the middle. Score it into nine pieces before baking. At 200 °C, the first 20 minutes make the mixture firm enough to separate and turn over, and the next 10 minutes bake the other side. The surface may brown unevenly because of the nori and seeds: judge doneness by how dry the center is rather than by appearance.

Serve these crackers with thick, lightly salted spreads, herbed cream cheese, mashed avocado or an unsweetened dip, keeping accompaniments low in salt as the nori, soy sauce, sesame and spices already provide seasoning. For Asian-inspired appetizers, pair them with rillettes, a wakame salad or a spoonful of sriracha mayonnaise, adding toppings just before serving. Once cooled, they keep for 3 to 4 days, separated by parchment paper. Avoid plastic bags, which soften them; a brief spell in the oven restores their crunch, but keep a close eye on them.

Ingredients

  • 100 g flaxseeds
  • 50 g pumpkin seeds
  • 50 g sesame seeds
  • 2 sheets nori (seaweed)
  • 175 ml water
  • 1 teaspoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger or galangal
  • 1 teaspoon chili flakes

Instructions

  • Crush the pumpkin seeds and flaxseeds with a mortar and pestle or grind them (I use a small electric coffee grinder for this).
    100 g flaxseeds, 50 g pumpkin seeds
  • Mix them with the spices, soy sauce (or coconut aminos) and sesame oil in a mixing bowl.

  • Add the water and leave to rest for just under an hour. This is necessary to allow the flaxseeds to absorb the liquid.

  • Preheat the oven to 200 degrees. Line a baking sheet with parchment paper.
  • Add the sesame seeds. Cut the nori into tiny pieces (folding it in half several times before cutting saves a lot of time). Mix everything together.

  • Fold a second sheet of parchment paper in half. Fold in the edges (about one centimeter) to create a 20 by 30 cm rectangle. Unfold the paper. See the video.
  • Place the dough on the paper and roughly shape it into a flat rectangle. Fold the paper closed. Turn it over with the folds facing down. Roll out the dough to the edges with a rolling pin. Unfold and score into 9 pieces.
  • Bake for 20 minutes. Then briefly remove the baking sheet from the oven. Break the crackers into pieces and turn them over. Return to the oven for 10 minutes.
  • Store the crackers for 3 to 4 days. Do not put them in a plastic bag, as they will become soft and tough. I store them by cutting the used parchment paper into 8 small pieces and one larger piece, placing the small pieces between the crackers and using the larger one to wrap them.

Equipment: oven set to 200 degrees, baking sheet, parchment paper, rolling pin, mixing bowl, small (electric) coffee grinder.
