What is gluten- and lactose-free lemon poppy seed cake?

Itโ€™s a lemon cake dotted with poppy seeds, made here without gluten or dairy. These substitutions keep the bright lemon flavor and delicate texture intact without changing the character of the cake.

Compared with denser loaf cakes, this one feels lighter and fresher. The poppy seeds add a fine crunch, while the lemon shines from start to finish. After baking, the cake is soaked with lemon syrup to deepen the flavor, then finished with a clear neutral glaze to help retain moisture.

The main ingredients

The base uses two flours: an all-purpose gluten-free flour blend with a binder for structure, and almond flour for richness without heaviness. Baking powder and salt balance the rise and seasoning, while the poppy seeds are left whole rather than sifted.

For the wet ingredients, mix the eggs with soy milk, soy yogurt, and lactose-free sour cream until smooth. Lemon juice and zest provide the main flavor. Add the plant-based butter melted, not cold or in pieces.

The syrup is made with lemon juice, sugar, and water, then brushed over the cake after baking. To finish, apply a warm clear neutral glaze and top with a little finely grated organic lemon zest.

Technical tips and pitfalls to avoid

Start by preparing the pan or pans: grease 1 large loaf pan or 2 smaller ones, then line them with parchment paper. This matters because the batter is quite moist and the cake is soaked after baking.

Sift the dry ingredients before mixing, but not everything: keep the poppy seeds and sugar aside. Once the dry ingredients are sifted, whisk them well so everything is evenly distributed.

Mixing the batter

In a separate mixing bowl, beat the eggs with the soy milk, soy yogurt, and sour cream until smooth. Add the lemon juice and melted plant-based butter, then mix until fully combined.

Pour this mixture over the dry ingredients. Finish with a whisk or a hand mixer, aiming for a smooth batter. If the batter isnโ€™t smooth before baking, itโ€™s not ready yet.

Baking

Once the batter is in the pan, you can place a thin strip of plant-based butter down the center; this is optional. To check doneness, insert a toothpick into the center; it should come out clean.

For 2 small pans, bake for 30-35 minutes. For 1 large pan, bake for 50-60 minutes. Watch the center of the cake, not just the color.

Syrup and finishing

Let the cake cool on a wire rack for 20 minutes first. The rack allows excess heat to escape without softening the bottom. Meanwhile, make the syrup in a small saucepan with the lemon juice, sugar, and water.

Heat over medium heat until it comes to a gentle boil, stirring occasionally. The sugar should dissolve completely; then let the syrup boil for 1-2 minutes more. Allow it to cool before using it on the cake.

When the cake is still warm but has rested, prick the surface with toothpicks or a fork. These holes help the syrup soak in. Then drizzle 5-6 spoonfuls of syrup evenly over the top.

The cake should then rest in the refrigerator for 1 hour so it can absorb the syrup. Overnight is even better. Just before serving, brush it with a warm clear neutral glaze, then grate a little organic lemon zest over the top.

Storage

To soak properly, the cake should rest in the refrigerator for at least 1 hour, though overnight is best. Itโ€™s the kind of cake thatโ€™s at its best served well chilled or after some time in the fridge.

  • 100 g lactose-free soy yogurt
  • 100 g lactose-free soy milk
  • 35 g lemon juice
  • zest of 3 lemons
  • 70 g vegan butter melted
  • 40 g sugar
  • 80 g lemon juice
  • 100 g water

Instructions

Lemon Poppy Seed Batter

  • Preheat the oven to 180ยฐC. Grease a large loaf pan or two small loaf pans, then line them with parchment paper.
  • Sift together all the dry ingredients, except the poppy seeds and sugar, then whisk to combine.
