Air Fryer Roast Beef

The knife slips through the browned crust, then into rosy meat that releases its juices onto the board. Roast beef needs nothing more than salt, pepper, and a little oil. Everything comes down to a few minutes and a good thermometer. The air fryer heats quickly and intensely, which makes it ideal for a compact cut and turns a traditional Sunday roast into an easy weeknight meal.

What exactly is roast beef ?

It is a cut of beef cooked with dry heat until the surface browns and the center reaches the doneness you want. Size matters : 600 to 800 g, thick enough to hold onto its juices, yet compact enough to fit in the basket without touching the sides. Here, the air fryer works much like a small convection oven.

On the outside, the Maillard reaction creates the crust and roasted flavors. At the center, the final result depends entirely on when you take the meat out. Then slice it thinly, against the grain, just as you would for crying tiger beef.

A Sunday roast in just 45 minutes

Roast beef is one of those dishes made for sharing : a handsome cut of meat, simple seasoning, neat slices, and plenty of juices. In France, as in much of Europe, it has long had its place on the Sunday table, often served with whole-grain mustard or horseradish to cut through the richness.

What the air fryer changes is the scale and the timing : a small kitchen, one basket, 5 minutes of preheating, and 20 to 30 minutes of cooking. The fundamentals stay the same. Cook the vegetables separately, for example air fryer zucchini or air fryer sweet potato fries : crowd them around the meat and they will release moisture and soften the crust.

The main ingredients for roast beef

A 600 to 800 g roast, 1 tablespoon of neutral oil, 1 teaspoon of fine salt, and 1/2 teaspoon of black pepper. That is the whole list.

Choose an oil that can handle 200 °C : grapeseed or sunflower oil both work well. Olive oil tends to smoke at this temperature. The oil mainly helps the seasoning adhere and promotes even browning.

If you like, add 1 teaspoon of dried thyme or rosemary, plus 1 garlic clove cut in half and tucked against the meat. Keep it simple : paprika and sweet spice blends tend to blacken at 200 °C.

Technical guidelines

A probe thermometer is the only truly reliable tool. Aim for 52 to 54 °C at the center for rare, and 58 to 60 °C for medium. The temperature will continue to rise as the meat rests, so remove the roast a little before it reaches your target.

Without a probe, cook at 200 °C from start to finish : 20 to 22 minutes for rare, 25 to 27 minutes for medium, and about 30 minutes for well done. The air fryer cooking chart provides more reference points.

Take the roast out of the refrigerator 30 minutes ahead of time and pat it dry. A damp surface will not sear; it will steam. Preheat the air fryer for 5 minutes at 200 °C, leave space around the meat, and turn it halfway through cooking.

For a 1.5 kg roast, lower the temperature to 180 °C and cook for 25 minutes, then another 25 to 30 minutes after turning. A ground or rolled roast must be cooked to 70 °C at the center, without exception. Never cook meat that is still frozen.

The 10-minute rest under a loosely tented sheet of foil is not optional : this is when the juices settle back into the meat. Slice thinly, against the grain. Any drippings left in the basket can be deglazed with red wine or broth for a quick, flavorful jus.

Roast

  • 1 beef roast 600 to 800 g

Instructions

Preparation

  • Remove the roast from the refrigerator 30 minutes before cooking.

Air Frying

  • Preheat the air fryer to 200 °C for 5 minutes.
  • Place the roast in the hot basket, making sure it does not touch the sides.
  • Cook to your desired doneness: 20 to 22 minutes for rare, 25 to 27 minutes for medium, or 30 minutes for well-done; turn the roast halfway through cooking.
  • Check the temperature in the center of the thickest part: aim for 52 to 54 °C for rare and 58 to 60 °C for medium.

Resting and Serving

  • Remove the roast, cover it with aluminum foil, and let it rest for 10 minutes.
  • Slice thinly against the grain and serve immediately.

Notes

  • A probe thermometer is the most reliable tool: aim for 52–54 °C at the center for rare and 58–60 °C for medium (remove the roast slightly before it reaches the target, as the temperature will continue to rise while it rests).
  • Resting the roast for 10 minutes under aluminum foil is essential for redistributing the juices and preventing it from drying out.
  • Bringing the meat out 30 minutes ahead of time and drying it well promotes better browning; preheating for 5 minutes at 200 °C helps form a crust quickly.
  • Turn the roast halfway through cooking and leave space around it to avoid creating a “steam” zone against the basket; if it sticks, wait 2 minutes before moving it.
  • Use an oil with a high smoke point (grapeseed, high-oleic sunflower, deodorized rapeseed); avoid olive oil at 200 °C.
  • For a large roast (about 1,5 kg), use 180 °C (25 min, then 25–30 min after turning) rather than extending the cooking time at 200 °C.
  • A ground or rolled roast must reach at least 70 °C at the center; never cook a roast that is still frozen.
