Frozen Fries in the Air Fryer

It is 7 p.m., nothing is planned for dinner, and there is a bag of fries lurking at the back of the freezer. Twenty minutes later, you open the basket to golden fries that snap between your fingers, with no pot of oil to watch and no lingering frying smell for the rest of the evening.

They are not quite the same as fries from a proper fry stand, the kind that stay crisp for a good quarter of an hour thanks to a thin film of fat. These are drier, cleaner, and far less forgiving if left to sit. The method sounds hit-or-miss until you pull off that first perfect batch.

What are frozen fries in the air fryer?

Frozen fries are not just raw potatoes. At the factory, they have already been blanched, dried, and then pre-fried for a few dozen seconds before being individually quick-frozen.

They still contain 4 to 6 g of fat per 100 g, a tiny reserve, but enough to make the surface crisp up again. That is true of almost all store-bought fries, and it is why they do not need any added oil.

An air fryer is not actually a deep fryer, though. It is a small convection chamber where a fan pushes hot air around the food.

Air carries much less energy than oil, so the crust forms more slowly and the result is closer to roasting. The fries that come out of the basket are drier than deep-fried ones, with edges that crackle and centers that stay tender.

From the fry stand to the frozen bag

Fries belong to a shared Franco-Belgian food culture: paper cones eaten standing up, roadside fry shops, and bistro plates. For a long time, it all came down to a vat of hot fat and a practiced hand : two rounds of frying, a pause in between, and a more-or-less accurate thermometer.

Food manufacturers took that know-how and broke it down into steps. Blanching to control sugars, drying to remove water, pre-frying to start the crust, rapid freezing to lock everything in. The bag in the freezer is the result of that process : a fry that is already half-cooked, simply waiting to be finished.

The air fryer arrived in home kitchens with the promise of finishing them without oil. The first batches are often disappointing : the basket is too full, the machine is cold at the start, the salt goes on too early. The appliance has very little to do with it; the method makes all the difference.

The key ingredients for air fryer fries

The bag does most of the work, as long as you pay more attention to the cut than the brand. The classic 10 mm cut remains the most balanced : 13 to 15 minutes for 300 g, 18 to 20 minutes for 600 g at 200 °C. The 7 mm shoestring cut cooks faster and dries out faster, while steakhouse fries at 13 to 15 mm instead need 195 °C and up to 23 minutes for 600 g. Oil is a red herring in this recipe. With pre-fried fries, it does not add crispness; it just smokes. Only raw frozen fries, not pre-fried ones, benefit from it : one teaspoon for 500 g, tossed in a bowl before going into the basket.

Salt goes on as soon as the fries come out of the basket, never before. Added too early, it draws moisture to the surface and softens the crust at the exact moment it should be forming. The same logic applies to sweet paprika, garlic powder, or herbes de Provence : they cling to a hot, slightly oily fry, not a raw one.

Technical tips for fries that stay crisp

Overloading the basket is the main reason fries turn out limp: keep them in a layer no more than 2 to 3 cm thick, or about 400 g in a 4 L basket, and apply the same rule to each drawer on a two-drawer appliance.

Beyond 700 g in the same volume, the air no longer circulates and the fries cook in the steam from their own moisture. A good fry is golden and stays firm when you lift it; if it bends, it needed more air or more time. Serve within 5 minutes, because without that insulating film of oil, air fryer fries soften quickly.

Ingredients

For the fries

  • 600 à 800 g frozen fries classic 10 mm cut (≈150 to 200 g per person)
  • 1 teaspoon neutral-flavored oil only for frozen raw fries that haven’t been pre-fried

For serving

  • fine salt
  • sweet paprika or garlic powder or herbes de Provence, to taste

Instructions

Preparation

  • Take the fries out of the freezer just before cooking; do not thaw them.

Air Frying

  • Preheat the air fryer to 200 °C for 3 minutes.
  • Add the fries to the hot basket and spread them in a layer no more than 2 to 3 cm thick.
  • Cook for 20 minutes at 200 °C.
  • Shake the basket after 8 minutes, then again after 15 minutes.
  • Check the color: the fries should be golden and stay firm when lifted.

Finishing

  • As soon as they come out of the basket, salt the fries, add your chosen seasoning, and serve within 5 minutes.

Notes

  • Preheating for 3 minutes at 200 °C gives crispier fries: if you add them to a cold basket, they spend longer thawing and tend to turn soggy.
  • Never thaw frozen fries: they release moisture and won’t brown as well.
  • Do not overcrowd the basket: aim for a layer 2 to 3 cm deep (≈400 g in a 4 L basket). It’s better to cook two batches.
  • Do not add oil to pre-fried fries (most frozen fries): it won’t make them crispier and may start to smoke. Only frozen raw fries benefit from it (≈1 tsp for 500 g), tossed before cooking.
  • Shake after 8 minutes, then again after 15 minutes so all sides are exposed to the hot air.
  • Salt (and season) only after cooking: salting beforehand softens the surface.
  • Serve within 5 minutes: air fryer fries lose their crispness faster than deep-fried fries.
