Bite-sized flaxseed wrap appetizers filled with mascarpone, smoked salmon, cucumber and dill, grain-free and very low in carbs.
Slicing reveals the spirals: mascarpone, smoked salmon, crunchy cucumber and finely chopped dill on a soft flaxseed wrap. Each is a single, fresh, melt-in-your-mouth bite, very low in carbs and free from grains and eggs. Designed for an appetizer buffet or a sharing platter, this recipe makes twenty-four bites in around fifty minutes, including resting time. File it alongside my keto breads and doughs.
What are wrap bites?
They are filled wraps that are rolled up and then sliced: three rolls each yield eight neat bites. The wheat tortilla is replaced by a homemade flaxseed wrap made with ground flaxseeds, hot water and salt. Its structure comes from the fiber in the flaxseeds, which swells on contact with water and forms a natural gel, pliable enough to roll out and then roll up.
The filling relies on a simple balance: around 40 g of mascarpone per wrap, smoked salmon over half the surface, cucumber sticks in the center and a little fresh dill. One bite provides around 62 kcal and 0.3 g of net carbs; a whole wrap provides around 496 kcal and 2.4 g of net carbs.

The idea behind the recipe
These bites keep the spirit of appetizer wraps: fill, roll, slice and share. This is an original creation adapted to a low-carb approach, in which a homemade flaxseed round, brown or golden depending on the seeds, replaces the tortilla and adds more fiber.
The appeal lies in the contrast: the mild creaminess of mascarpone, the smoky saltiness of salmon, the freshness of cucumber and the aniseed note of dill. This format works just as well on a cold buffet as on a lunch plate. Keep the bites well chilled and assemble them just before serving to keep the wrap pliable.
Key ingredients
Flaxseeds are the foundation. Whether you buy them whole and grind them in a coffee grinder or buy them ready-ground, they should be as fine as possible for a smooth dough that is easy to roll out. Brown flaxseeds make darker wraps, while golden flaxseeds give a lighter color; avoid defatted flaxseed flour, which does not absorb water in the same way.

Very hot water hydrates the fiber and helps bind the dough; with salt and some resting time, it holds together better. Mascarpone adds creaminess, holds the roll together and balances the saltiness of the salmon. For the salmon, a wild fish such as sockeye is a good choice, depending on availability: check the species and production method on the label.
Cucumber cut into sticks adds freshness, while dill gives the bite its distinctive flavor without overpowering it. A few drops of avocado oil, mild olive oil or high-oleic sunflower oil are used only to grease the pan. You can find flaxseeds in health food stores or the health food aisle, and mascarpone in the refrigerated section.
Technique and serving tips
Start with finely ground seeds, then let the dough rest for around thirty minutes before dividing it into three portions. Roll out each round between two sheets of parchment paper and trim it to fit the diameter of your pan. In a hot, lightly oiled pan, cook each wrap for around 2 minutes per side: the surface should be set but still pliable, as the dark color of brown flaxseeds means color alone is not a reliable guide. Do not overcook them or they will crack, and slice them with a sharp knife without squashing the rolls.

Arrange the bites cut-side up and enjoy them cold, with no added sauce: the mascarpone is enough. A wakame salad, raw vegetables or sparkling water with lemon pair well with them. Store the unfilled wraps in the refrigerator, separated by parchment paper, and fill them at the last minute to minimize moisture from the cucumber. Raw smoked salmon is not recommended for pregnant women or people with weakened immune systems because of the risk of listeriosis.

Smoked Salmon and Mascarpone Wrap Bites (Keto)
Ingredients
- 150 g flaxseeds or ground flaxseeds
- 2 tablespoons flaxseeds extra, or ground flaxseeds
- 250 ml water boiling or hot
- 3 generous pinches salt (Celtic sea salt)
- 120 g mascarpone
- 100 g smoked salmon (wild) such as sockeye
- 0.5 cucumber
- a handful dill fresh
- 3 small drops avocado oil, mild olive oil or high-oleic sunflower oil
Instructions
- Grind the flaxseeds as finely as possible. I use a small electric coffee grinder for this. Ready-ground flaxseeds work too.150 g flaxseeds
- Heat the water in a saucepan or pour in boiling water from the kettle.250 ml water
- Mix with the ground flaxseeds and salt. Let rest for half an hour.3 generous pinches salt (Celtic sea salt)
- Knead the dough briefly and shape into 3 equal small balls.
- Place a piece of parchment paper on the work surface (at least as wide as the diameter of the frying pan). If the dough is still very sticky: sprinkle a little ground flaxseed onto the parchment paper. Flatten the dough on it and place the second piece of parchment paper on top. Roll out with a rolling pin. The edges may be slightly uneven.2 tablespoons flaxseeds
- Remove the top piece of parchment paper. Press an upside-down bowl onto the dough. Remove the trimmings.
- Heat the frying pan. Add a few small drops of oil. Cook the wrap for about 2 minutes on each side.3 small drops avocado oil, mild olive oil or high-oleic sunflower oil
- Repeat for 2 more wraps.
- Spread each wrap with about 40 grams of mascarpone. Top half of each wrap with salmon.120 g mascarpone, 100 g smoked salmon (wild)
- Wash and cut the cucumber into sticks and place them in the middle of each wrap. Snip the dill into smaller pieces with scissors and scatter over the filling.0.5 cucumber, a handful dill
