An individual low-carb bread roll shaped into a ball, then slightly flattened before baking. The dough combines almond flour, ground flaxseed and egg white: the almond flour provides structure, nutty flavor and fat, the ground flaxseed binds through its mucilage without the elasticity of gluten, and the egg white hydrates the dough and firms up in the oven.
The rise comes from an immediate reaction: when it comes into contact with white or apple cider vinegar, the baking soda makes the mixture foam and releases gas, aerating the dough. Bake immediately at 180 °C for 40 minutes. The crumb is denser than wheat bread but stays soft, with a smooth crust and flaxseed notes that balance the almond.

The idea behind this version
This is a keto version of an individual bread roll: almond and flaxseed replace wheat flour, and chemical leavening replaces fermentation. The method changes too, with quick mixing, simple shaping and immediate baking, without kneading or proofing. The aim is still delicious enjoyment: a warm roll to split open for savory toppings, with a dense, nourishing crumb. The timing of baking is crucial: as soon as the vinegar touches the baking soda, the dough activates, and the sooner it goes into the oven, the better it retains the gas.
The main ingredients
The list is short and every ingredient counts, for one serving (multiply the quantities to make several rolls). 50 g of almond flour forms the base, with a mild nutty flavor and absorption that varies depending on the grind. 20 g of finely ground flaxseed acts as a binder, its mucilage trapping the gas bubbles. One egg white, added as is without whipping, hydrates the dough and sets during baking. One tablespoon of extra virgin olive oil softens the crumb and helps prevent it from drying out.

One teaspoon of baking soda, measured precisely to avoid an alkaline taste, acts as the leavening agent; 3 teaspoons of white or apple cider vinegar, added last, activate it and trigger the rise. Sliced almonds, pressed lightly into the surface, turn golden in the oven. Before the vinegar is added, the dough looks crumbly, then becomes sticky and pliable; this is normal. Choose almond flour with a grind you have checked, and grind the flaxseed just before using; food-grade baking soda and ordinary vinegar are all you need.
Texture, baking and serving
The dough does not need to be perfectly smooth: a small ball shaped quickly and slightly flattened on parchment paper rises and smooths out in the oven. After 40 minutes at 180 °C, the surface should be set and golden, with the sliced almonds just toasted; color is a guide but does not guarantee that the center is cooked. Resting before slicing stabilizes the crumb, which is fragile when hot. Prepare the baking sheet before triggering the reaction, shape quickly and handle as little as possible once the foam appears.

It keeps for about 2 days, thoroughly cooled and then wrapped to limit condensation, or can be frozen once cold, sliced for easier reheating. Ingredients
- 50 g almond flour
- 20 g flaxseed
- 1 egg white
- 1 tablespoon extra virgin olive oil
- 1 teaspoon baking soda
- 3 teaspoons white vinegar or apple cider vinegar

Instructions
- Preheat the oven to 180 degrees. Prepare the baking sheet by lining it with a sheet of parchment paper.
- Finely grind the flaxseed into flour. Mix it with the almond flour and baking soda in a mixing bowl.20 g flaxseed, 50 g almond flour, 1 teaspoon baking soda
- Crack the egg and separate the yolk from the white. Add the white. Do not use the yolk. Mix the egg white and olive oil into the dry ingredients until you have a crumbly dough.1 egg white, 1 tablespoon extra virgin olive oil
- Drizzle the vinegar over the dough. Immediately mix everything together. The mixture will start to foam and turn slightly white; this is normal (the acid reacting with the baking soda). The texture will become a little sticky and gooey.3 teaspoons white vinegar or apple cider vinegar
- Shape the dough into a small ball with your hands. It does not need to be perfectly smooth or pretty; the rolls will rise considerably, so the crust will smooth out on its own.
