Cauliflower and Mushroom Risotto (Keto, Rice-Free)

A rice-free cauliflower and mushroom risotto: cauliflower grains bound with pecorino and flavored with golden-brown mushrooms.

In the pan, the mushrooms brown over high heat and release dark juices with nutty, earthy notes. A few minutes later, the cauliflower grains are tender but firm, coated in melted pecorino, with garlic, red onion and herbs. This ketogenic version replaces rice with finely processed cauliflower, its creamy texture coming from the vegetable and cheese. Allow 15 minutes for two servings, in the spirit of meals ready in 20 minutes. This recipe is part of my collection of keto main dishes.

What is cauliflower risotto?

It has the loose, glossy, sauce-coated texture of risotto, without the rice. The grains come from raw cauliflower finely processed into small, distinct pieces, small enough to cook quickly and firm enough to hold their shape; if you often cook with this kind of base, the vegetable guide offers some pointers. The flavor comes primarily from well-browned cremini mushrooms, whose reserved juices flavor the dish: 3 to 4 tablespoons in total, topped up with a little water if needed; these braised mushrooms show how to intensify their flavor.

Red onion adds melting sweetness, garlic brings depth, sage, thyme or oregano contribute herbal notes, and pepper provides the finishing touch. The grains are bound with grated pecorino or Parmesan, stirred in over moderate heat to coat them without clumping. This method does away with toasting the rice, white wine and the gradual addition of stock: the creaminess comes from melted cheese, olive oil and the mushroom juices, with the mushrooms added at the end of cooking to preserve their texture.

Origins of the dish

This adaptation takes its inspiration from contemporary low-carb cooking: the comfort of a creamy dish with tender grains, with fewer carbohydrates thanks to cauliflower. One serving provides 16 g of net carbs, fitting into a ketogenic diet if the rest of the day remains very low in carbohydrates. Olive oil replaces butter, pecorino binds everything together, and the umami comes mainly from the browned mushrooms. Grate the cheese just before using it so it melts evenly; ready-to-use cauliflower rice works in a pinch, but processing it yourself gives a fresher result, and the guide to rice varieties helps explain what you are replacing.

The main ingredients

300 g of cauliflower forms the grain-like base, processed into grains that soften quickly and absorb the mushroom juices. 250 g of cremini mushrooms provides umami, texture and cooking juices, sliced thickly enough to shrink without disappearing. 100 g of pecorino or Parmesan, grated then melted, binds the grains, adds saltiness and creates creaminess without starch. One red onion softens in the oil, while 2 crushed garlic cloves added toward the end retain their bright aroma; for a different approach, fried garlic also adds depth.

Three generous drizzles of extra virgin olive oil help the mushrooms brown and add a rounded, fruity flavor. One tablespoon of herbs, such as sage, thyme or oregano, brings Mediterranean notes; 3 pinches of salt, used judiciously because of the cheese, and 2 pinches of black pepper bring the richness of the pecorino to life.

Technique, texture and serving

The texture depends on the processing: pulse the raw cauliflower with an S-shaped blade until it forms distinct grains, as overprocessing releases too much moisture. The mushrooms need a large pan and high heat: brown them until their surfaces are deeply golden, then drain them over a container to catch their juices. Add the salt halfway through cooking, then adjust the liquid to 3 to 4 tablespoons in total, adding just a little water if there are not enough juices.

Next, cook the onion until translucent, adding the garlic toward the end, then the cauliflower with a drizzle of oil, the pepper and the herbs. Cook for 6 to 7 minutes over medium-high heat for grains that are tender, distinct and moist without being wet. Stir in the grated cheese over moderate heat for an even coating. Serve hot, as soon as the mushrooms have been stirred in, with a Japanese cabbage salad or a tangy green salad; this risotto pairs well with air fryer salmon, pan-seared scallops or roasted meat. Leftovers keep for three days in the refrigerator; reheat gently in a pan with a splash of water if the sauce needs loosening.

Ingredients

  • 300 g cauliflower
  • 250 g cremini mushrooms
  • 100 g Pecorino or Parmesan
  • 1 red onion
  • 2 cloves garlic
  • 3 pinches salt
  • 2 pinches black pepper ground
  • 1 tablespoon herbs sage, thyme or oregano
  • 3 generous splashes extra virgin olive oil

Instructions

  • Cut the mushrooms into slices slightly thicker than you would like to eat them: they will shrink further. If they are very dirty, brush them clean first.
    250 g cremini mushrooms
  • Brown on all sides over fairly high heat. Sprinkle with salt halfway through cooking.

  • Let the mushrooms drain in a small sieve or colander. Be sure to save the juices!
  • Meanwhile, finely chop the onion and press the garlic.
    1 red onion, 2 cloves garlic
  • Add another splash of oil to the pan. Sautรฉ the onion until translucent. Add the garlic only at the end.
  • Process the cauliflower into rice. You can do this in a large food processor fitted with an S-shaped blade.

  • Add the cauliflower rice and a splash of oil. Stir a few times to blend the flavors. Add the pepper and herbs.
    2 pinches black pepper, 1 tablespoon herbs
  • Add the reserved mushroom juices. You need 3 to 4 tablespoons of liquid. If there is not enough, top up with water.
  • Simmer for 6 to 7 minutes over medium-high heat.
  • Grate the cheese.
    100 g Pecorino
  • Lower the heat slightly. Add the cheese and let it melt.
  • Stir in the mushrooms.

Notes

You can buy ready-made cauliflower rice, but simply processing the cauliflower yourself is much cheaper and fresher.
Equipment: large PFAS-free frying pan, grater (four-sided), sieve + bowl to collect the juices, food processor.
