The edges are browned and lightly crisp, the centers stay tender, and you smell the thyme as soon as you open the basket. Finish with a drizzle of honey and the pieces turn glossy, almost candied. No oven to preheat, no baking sheet to scrub : just one bowl for seasoning and 17 minutes of cooking. It’s an easy side dish for nights when you need quick meals.

What are air fryer carrots ?

They’re roasted carrots cooked in a compact basket where hot air circulates quickly. That airflow dries the surface and kick-starts browning while the inside turns tender.

This recipe doesn’t ask for much : 500 to 600 g of evenly sized carrots, dried and coated with a tablespoon of olive oil, thyme or herbes de Provence, a hint of cumin or sweet paprika, plus salt and pepper. Cook for 17 minutes at 190 °C, plus 2 to 3 minutes of preheating.

Roasted carrots, just on a smaller scale

Before the air fryer, roasted carrots belonged in the oven : large baking sheets and enveloping heat. The basket follows the same principle on a smaller scale, with convection that browns faster.

The seasoning stays distinctly French : thyme, herbes de Provence, and sometimes a pinch of cumin or sweet paprika. Drizzle on the honey during the last 2 minutes for a satin finish that enhances the carrots without making them taste sweet.

Main ingredients for air fryer carrots

500 to 600 g of carrots make 3 servings, or 150 to 200 g per person. Size matters just as much as weight. Because carrots are conical, the top can be twice as thick as the tip : split the thick end lengthwise before cutting.

1 tablespoon of olive oil for 500 to 600 g is the right amount. Any less, and the spices won’t adhere. Any more, and the carrots turn greasy without getting crispier. Half a teaspoon of thyme and the same amount of cumin or sweet paprika are plenty.

Salt brings out the natural sweetness, while pepper adds depth. The teaspoon of honey is optional and should be added at the end, not at the beginning : sugar darkens long before the 17 minutes are up.

Technical guidelines

Cooking time depends on the cut, not the carrot. Keep the temperature at 190 °C : 14 to 16 minutes for thick rounds, 16 to 18 for medium batons, and 18 to 20 for large chunks. The 17 minutes in this recipe are based on a medium cut. The air fryer cooking chart gives the other benchmarks.

Dry the pieces well with a kitchen towel after washing. As long as surface moisture is evaporating, the carrots will steam instead of roast. Ten seconds with a towel make all the difference for proper caramelization.

Arrange the carrots in a single layer, leaving space between the pieces. Two layers in the basket give you soft, pale carrots underneath and browned ones on top. Two batches are better than an overcrowded basket. The same rule also applies to zucchini and air fryer eggplant.

Shake the basket once, after 8 to 9 minutes : carrots brown only on the side touching the basket. Doneness is more about feel than looks. The tip of a knife should slide into the center of a piece without resistance.

For extra crunch, a light coating of cornstarch creates a crisp shell. It’s a different texture, closer to fries than classic roasted carrots, and outside the scope of the basic recipe.

For something more substantial in the same basket : stuffed tomatoes.

As soon as they come out, scatter over finely chopped fresh herbs : the residual heat will release their aroma. A pinch of fleur de sel highlights the caramelized edges. Serve with chicken breasts, a salmon fillet, or sweet potato fries, all cooked in the basket.

Preparation

  • Peel the carrots, or simply scrub them clean under running water.

  • Trim both ends.
  • Cut the carrots into thick rounds, batons, or diagonal chunks.
  • Halve any very thick carrots lengthwise.
  • Pat the pieces dry thoroughly with a kitchen towel or paper towels.
  • Transfer the carrots to a mixing bowl.
  • Add the olive oil, thyme, cumin, salt, and black pepper.

  • Toss until all the pieces are evenly coated.

Air Frying

  • Preheat the air fryer to 190 °C for 2 to 3 minutes.
  • Arrange the carrots in the basket in a single layer, without overcrowding.
  • Cook at 190 °C for 17 minutes.
  • Shake the basket halfway through cooking, after 8 to 9 minutes.
  • Check for doneness with the tip of a knife; it should slide through a piece without resistance.
  • Drizzle with a little honey only during the last 2 minutes, if using.

Notes

  • Cooking time mainly depends on the cut (always at 190 °C): 14–16 min for thick rounds, 16–18 min for medium batons, and 18–20 min for large chunks. Adjust according to the actual size of the pieces.
  • For even cooking, cut the carrots into pieces of similar thickness: split the widest part lengthwise before slicing.
  • Dry the carrots well after washing: less moisture on the surface means better caramelization.
  • Cook in a single, well-spaced layer: two batches are better than an overcrowded basket.
  • Shaking once halfway through is enough for medium pieces; for thin batons, shake the basket 2 times instead (every 5–6 min).
  • A good doneness cue: the tip of a knife should slide easily into the center of a piece.
  • Honey (or maple syrup) can burn, so add it only during the last 2 minutes.
  • Peeling is optional: thin skin crisps up nicely, but thicker-skinned storage carrots are better peeled.
  • Ratio: 1 tbsp of oil for 500–600 g is ideal; toss everything in a bowl rather than directly in the basket.
  • Frozen option: cook straight from frozen, add 3 to 5 minutes, and shake the basket 2 times.
  • Serving guide: allow 150–200 g of raw carrots per person.
