Open the basket and the aroma rushes out at once : warm thyme, melted butter, onion softened in the tomato juices. The filling has formed a golden crust on top while the tomatoes have slumped just enough, without falling apart. All around, there’s that dark cooking jus left behind, the kind you scoop up with a spoon and that feels like half the pleasure of the dish. It’s the spirit of a French home-cooked Sunday lunch, without ever turning on the oven.

What are air fryer stuffed tomatoes ?

A hollowed-out tomato acts as the container; the filling cooks inside while the vegetable releases its juices around it. Here, the stuffing combines 250 g of sausage meat and 250 g of ground meat, pre-cooked in a skillet and then mixed with half an onion, garlic, and parsley. The cut tops go back on the tomatoes during cooking, which helps keep the filling moist. The remaining onion and the flesh scooped out with a spoon are scattered around the tomatoes, and that’s where the juices come from.

The name says it all. To stuff is to fill, and the word stuffing refers both to the act and to the mixture that goes inside. Tomatoes belong to the family of stuffed vegetables, just like zucchini or peppers, and here they’re cooked in an air fryer rather than in the oven.

The stuffed-vegetable tradition

Stuffed tomatoes belong to the larger family of stuffed vegetables, a staple of French home cooking and of the Mediterranean basin as a whole. Zucchini, peppers, eggplants, and tomatoes all play the same role: an edible vessel that holds a filling and releases its juices as it cooks. Tomatoes yield the most liquid, which means the richest juices at the bottom of the dish.

From one household to the next, the proportions vary. Some lean heavily on sausage meat for a richer, more aromatic filling; others balance it with more ground meat. Parsley takes center stage, while thyme stays in the background. Some versions add a panade or an egg to bind the mixture, but the basic recipe needs neither.

The air fryer changes the cooking method, not the nature of the dish. The circulating air browns the top of the filling without relying on the oven broiler, and the tomatoes hold their shape better because they cook gently rather than over high heat.

The key ingredients in stuffed tomatoes

It all starts with the size and firmness of the tomatoes. Four medium, very firm tomatoes, ideally slightly underripe, hold up during cooking without collapsing, whereas a fully ripe tomato will release all its juices after 20 minutes. Medium-sized tomatoes are the sweet spot, because a large tomato takes longer to turn tender than the filling takes to brown.

The filling combines two meats that each play a different role. Sausage meat brings fat, built-in seasoning, and good browning, while ground meat provides structure and keeps the whole thing from becoming overly rich. Divide the onion and garlic in two, using half in the filling and half around the tomatoes. Season with a light hand; sausage meat is often already salted.

Thyme and butter do their work on the outside. Thyme perfumes the juices that collect in the dish, and the knob of butter set on each tomato melts and gives the top a glossy finish. Don’t discard the flesh scooped out with a spoon; chopped and scattered around the tomatoes, it adds moisture and flavor that meat alone can’t provide. Serve with pasta, a green salad, or fluffy jasmine rice.

The baking dish is the real constraint: you need a container that fits inside the basket while still leaving space for air to circulate, and nothing must touch the heating element at the top of the drawer. On a 3 to 4 L appliance, use individual ramekins or cook in two batches. After hollowing out the tomatoes, salt the inside and turn them upside down on paper towels for 10 minutes; otherwise the filling will sit in liquid instead of holding together. Pre-cooking both meats in a skillet is not optional: a raw filling takes longer to cook through than the tomato takes to soften. Count on 15 minutes of prep, then 40 to 45 minutes at 160 ยฐC in an appliance preheated to the same temperature, for 4 servings. Ingredients

Tomatoes

  • 4 tomatoes medium, very firm

Stuffing

  • 250 g sausage meat
  • 250 g ground meat
  • 1 onion chopped
  • 1 clove garlic chopped
  • fresh parsley chopped
  • 1 pinch salt
  • 1 pinch pepper

For the dish

  • fresh thyme
  • 1 knob butter

Instructions

Prepare the stuffing

  • Lightly brown the sausage meat in a skillet, then do the same with the ground meat.

  • Transfer both meats to a mixing bowl.
  • Peel and finely chop the onion and garlic.

  • Add half the onion, the garlic, the salt, the pepper, and a little parsley, then mix until the stuffing is evenly combined.

Assemble

  • Slice the tops off the tomatoes. Scoop out the flesh with a spoon and reserve it, then season the insides with salt and pepper.

  • Fill the tomatoes with the stuffing, packing it in firmly, then replace the tops.
  • Arrange the tomatoes in an air fryer-safe dish, leaving a little space between them. Scatter the remaining onion and the reserved tomato flesh around them, sprinkle with thyme, and top each tomato with a small knob of butter.

Cook in the air fryer

  • Preheat the air fryer to 160 ยฐC.
  • Place the dish in the basket and cook for 40 to 45 minutes at 160 ยฐC.
  • Check that the tomatoes are tender and the stuffing is golden on top.

Finish

  • Remove the dish and let it rest for a few minutes before serving, ideally 5 minutes.
  • Serve with rice, pasta, or a green salad.

Notes

  • Choose very firm tomatoes, ideally slightly underripe, so they hold their shape better during cooking.
  • After hollowing out the tomatoes, salt the insides and place them upside down on paper towels for 10 minutes to draw out excess moisture.
  • Pre-cooking the meats in a skillet is essential: it gives you a flavorful stuffing that cooks through without overcooking the tomatoes.
  • Use a dish that fits inside the basket with space for air to circulate all around it (glass, ceramic, or an aluminum tray that can withstand 200 ยฐC), and check the height so it doesn’t touch the heating element.
  • For a quicker variation, cook at 180 ยฐC for about 25 minutes (depending on the size of the tomatoes) for a more deeply browned stuffing and firmer tomatoes.
  • For a gratinรฉed top, sprinkle the stuffing with a little breadcrumbs or Parmesan (the butter helps it brown nicely).
  • Storage: 2 to 3 days in the refrigerator or up to 2 months in the freezer. Reheating: 3 to 5 minutes at 180 ยฐC (from the fridge) or 10 to 12 minutes at 160 ยฐC (from frozen), covering with aluminum foil at first.
