Then comes that moment when the basket opens and the aroma rushes up all at once: bold, a little wild, the smell of a good bistro. The skin has turned deep brown and taut; it crackles under the tongs.
Inside, the filling stays tender and rich, just as it should, while the whole-grain mustard sauce cuts through it with a sharp tang. Andouillette gets a bad rap from people who have never had a good one. A butcher-made AAAAA, crisped in hot air, settles the matter in a single bite.

Andouillette: what is it ?
Andouillette is a coarse-grained French charcuterie made from pork chaudin, that is, large intestine, and stomach, seasoned and stuffed into a natural casing. It is sold already cooked, having been poached in a well-seasoned court-bouillon by the butcher. At home, you are not really cooking it : you are heating it through, rendering the remaining fat, and browning the skin. That is exactly what an air fryer does so well, with circulating hot air that dries the surface and triggers the Maillard reaction in the casingโs collagen.
The name is a diminutive of andouille, but this is not simply a smaller andouille : the product, the size, and the way it is served are all different. The AAAAA label comes from the Association amicale des amateurs dโandouillette authentique, a club of gastronomes founded in the 1970s to recognize artisanal producers.

From Troyes to Lyon, a butcherโs specialty
Andouillette has been part of French cuisine since the Middle Ages. Butchers developed it as a way to use offal : lengthy cleaning, careful seasoning, hand-stuffing, and slow poaching. Troyes, in Champagne, gave it its best-known version, made entirely from pork.
Lyon preserves the memory of andouillettes made with fraise de veau, which gives them a softer texture. In the Aube, they add their local cheese, Chaource, melting it over a split andouillette at the end of cooking. Every region defends its own version, and butcher competitions keep the rivalry alive.
It is served as a classic bistro main, with fries, gratin dauphinois, or roasted baby potatoes, and a jar of whole-grain mustard on the table. Cook the potatoes separately : they need neither the same time nor the same temperature as the andouillette, and cooking them together in an overcrowded basket spoils both. Before the air fryer, the finishing was done in a skillet, under the broiler, or in the oven, with splatters and a smell that lingered in the kitchen for days.
The key ingredients for andouillette
Everything starts with the andouillette itself. Choose an AAAAA one from a butcher rather than a supermarket pack : the label indicates pork chaudin with no binders or industrial stuffing, and the Troyes style is the benchmark. The natural casing is what turns crisp, and if it is thin and taut, the rest follows.
Olive oil and Dijon mustard make up the coating. The thin film of oil keeps the casingโs collagen from drying out too quickly and promotes even browning, while the mustard adds bite. Finish with freshly ground pepper, and nothing else : andouillette is already heavily salted during production, and extra salt will make it inedible.
The sauce is made separately in a saucepan, never in the basket, where it would soften the skin. Sweat the shallot in butter, deglaze with dry white wine, then add thick crรจme fraรฎche and whole-grain mustard and reduce briefly. A Chablis in place of a generic white wine gives the sauce a brighter edge that balances the richness.

Technical tips for air fryer andouillette
The key cue is visual: the skin should be well browned, taut, and crisp under the tongs. Never go above 180ย ยฐC; at 200ย ยฐC, the skin will burst even if pricked. And do not split the andouillette for the classic version, or it will leak out and dry. Prick it lightly with a fork, 3 to 4 small holes on each side, to let the steam escape, and always turn it with tongs, never with a fork, which creates uncontrolled holes for the fat to run out.

A 3-minute preheat is not optional: in a cold basket, the andouillette heats through before it browns, and the skin shrivels instead of tightening. Adjust only the cooking time to the size, always at 180ย ยฐC: 10 to 12 minutes for a thin andouillette, 12 to 15 minutes for a standard one, and 15 to 18 minutes for an XXL. Serve it right away; reheated, it turns rubbery.
The only reason to split an andouillette in two is for the gratinรฉed version: cook it for 12 minutes, split it lengthwise, top with Chaource, then return it for 3 minutes to melt the cheese. The air fryer cooking chart is a useful guide for the rest of the meal.

- Prick each andouillette with a fork, making 3 to 4 holes on each side.

- Brush the andouillettes all over with this mixture.

Air Fryer Cooking
- Preheat the air fryer to 180 ยฐC for 3 minutes.
- Arrange the andouillettes in the basket, making sure they do not touch.
- Cook for 8 minutes.
- Turn them carefully with tongs.
- Continue cooking for 5 to 7 minutes, until the casing is deeply golden and crisp.
Mustard Sauce
- Sweat the shallot in butter in a small saucepan.1 shallot, butter

- Let the sauce reduce for 3 minutes.

- Plate the andouillettes, spoon the mustard sauce over them, and serve immediately.
Notes
- Never exceed 180ย ยฐC: at 200ย ยฐC, the casing often bursts, even if pricked.
- Prick lightly with small holes to reduce the risk of bursting while keeping in as much juice as possible.
- Turn with tongs, not a fork, to avoid making extra holes.
- Do not salt the andouillettes: they are already quite salty. Adjust the seasoning with pepper and mustard instead.
- Adjust the cooking time to the size at 180ย ยฐC: 10โ12ย min (small), 12โ15ย min (standard), 15โ18ย min (XXL). Look for a nicely browned, taut casing.
- Serve immediately: reheated andouillette quickly turns rubbery (if needed: 5ย min at 170ย ยฐC, never in the microwave).
- Preheating for 3ย min helps sear the casing on contact and improves crispness.
- Clean the tray and basket soon after cooking: solidified fat traps odors.
