Open the basket and the aroma hits all at once: toasted paprika, warm curry, and a hint of nuttiness. The florets take on that uneven brown color you never get in a saucepan; the tips are still crackling, and the lemon brightens everything at the very last moment.
You spear one to check if it’s done, then a second, and the bowl is nearly empty before it even reaches the table. Cauliflower still has a reputation as a limp vegetable that makes the whole kitchen smell. It doesn’t take much to change that.

What Is Air Fryer Cauliflower ?
It’s made with 3- to 4 cm cauliflower florets, coated in olive oil and spices, then roasted in a countertop hot-air appliance. This isn’t deep-frying, and nothing is submerged: the air circulates at high speed around the pieces and cooks them by convection. The shape of the vegetable does the rest: its nooks and crannies catch the heat and brown quickly, while the denser stem turns tender. The same principle works for most vegetables in the basket, from zucchini to eggplant.
The circulating air drives off surface moisture, the very thing that usually prevents browning. Once the surface is dry, the Maillard reaction develops toasted notes and a nutty flavor, while also banishing the sulfurous smell of boiled cauliflower. From neglected vegetable to air fryer staple
Cauliflower used to suffer from the way it was cooked. Boiled or steamed, it releases moisture, collapses, and gives off the sulfur compounds behind that dreaded cafeteria smell. The oven already did a decent job of roasting it, but it took a solid half hour and left you with a baking sheet to scrub afterward.
The arrival of the air fryer in home kitchens made this kind of roasting practical on a weeknight. The airflow concentrates surface aromas and replaces cabbagey smells with nutty notes. The cooking time is short enough to preserve much of the vitamin C and glucosinolates that boiling water leaches out and prolonged oven roasting degrades.
Those same golden florets lend themselves to all kinds of cuisines. Buffalo-style, they’re crisped first, coated in butter and hot sauce, then returned briefly to the basket. The key ingredients for air fryer cauliflower
A medium cauliflower weighing about 800 g serves four. Trim away the outer leaves, cut off the tough base, then break the head into 3- to 4 cm florets of equal size. That matters more than anything else, even more than the temperature. The 2 tablespoons of extra-virgin olive oil coat the nooks and crannies, help the spices cling despite the airflow, and keep the tips from drying out.
The seasoning is built on three elements. Sweet paprika, 1 teaspoon, gives the cauliflower its orange-red color. Curry powder, ยฝ teaspoon, adds gentle warmth and depth. A tablespoon of lemon juice cuts through the richness and brightens the browned edges, with sea salt and freshly ground black pepper to finish.
The finishing touch is optional, and it changes everything. A tablespoon of grated Parmesan and 2 tablespoons of panko breadcrumbs, scattered over the florets 2 minutes before the end, create a salty, crunchy crust. Add them at the start and they will burn: the cheese sticks to the basket, and the breadcrumbs blacken long before the cauliflower is done. Technical tips for well-browned cauliflower
Three things determine the result: florets dried thoroughly after rinsing, a single layer in the basket, and a two-stage cooking time. Water trapped between the florets turns to steam and prevents browning; an overcrowded basket has exactly the same effect, so for 800ย g, plan on two batches rather than one overloaded basket.

Cook for 15 minutes at 180ย ยฐC to tenderize the stem, then 2 minutes at 200ย ยฐC to brown the edges. Reverse the order and the tips will burn before the stalk is tender. You’ll know it’s ready when the edges are browned and crisp, and the tip of a knife slides in easily.
Go any further and the cauliflower turns gray and takes on a sulfurous taste. Serve immediately: leftovers can be recrisped for 8 to 10 minutes at 200ย ยฐC, but they’re never quite as good as that first batch straight from the basket.
