5 Gluten-Free and Lactose-Free Desserts That Wow

When dessert is gluten-free and lactose-free, it often ends up as a brown fondant served in a shallow bowl. These five are built to slice cleanly and look good whole: distinct layers, torched meringues, visible raspberries. All are on the site, tested and written with measurements down to the gram.

The 3-layer vegan chocolate mousse cake stacks a dark chocolate layer, a plant-based milk chocolate layer and a white chocolate layer on a chocolate crumb base. All three are clearly visible because each chills until set before the next is added.

No gelatin or eggs: the structure comes from melted chocolate mixed with whipped plant-based cream. A dusting of cocoa is all it needs to finish.

Framboisier, with raspberries standing tall

It is built from four components prepared in advance, leaving only assembly for the final stage. The mousseline cream depends directly on your choice of margarine and oat milk: that is where to spend your money.

A cookie crust, a thick, smooth mango and passion fruit cream, meringue peaks added at the last moment. The mango passion fruit cake plays on the sweetness of ripe fruit, followed by the tartness of passion fruit.

The decoration holds its shape thanks to vegan potato protein meringue, which keeps its peaks without a single egg.

A 9 cm macaron as a cake

Two large almond shells, a whipped mango ganache, a ring of raspberries between the two. The mango raspberry macaron cake brings the look of a Parisian pastry shop window in a size made for sharing.

The lemon juice in the ganache cuts through the sweetness of the white chocolate and keeps the mango flavor clear. The shells remain the only truly technical step, which also explains the price of shop-bought macarons.

Banana, matcha and candied orange

The combination sounds unlikely on paper. It works because each element has a role: banana for moistness, matcha for bitterness, orange for brightness, chocolate for depth.

Before you start

None of these five can be thrown together on a Sunday at 3 p.m.: they are prepared in stages, over two days if needed, with ingredients weighed to the nearest gram, because gluten-free flours leave little room for guesswork.
