Flaxseed Porridge

Coffee flavors the coconut milk, ground flaxseed forms a thick cream, and toasted almonds, diced squash and cacao nibs add texture. This porridge replaces rolled oats with ground flaxseed for a nourishing, low-carb breakfast. For one serving, allow 20 minutes: 10 minutes of preparation and 10 minutes of cooking. One to add to my keto breakfasts.

What is flaxseed porridge?

The basic idea of porridge stays the same here: a warm, thick and comforting dish to eat with a spoon. The base changes: ground flaxseed replaces rolled oats and thickens when mixed with liquid, its mucilage giving it a soft, almost sauce-like consistency. Thick canned coconut milk adds richness and fat, while coffee brings distinct bitterness and roasted aromas.

The texture comes from letting the flaxseed rest in the coconut milk for at least 10 minutes, thickening before being warmed with the erythritol and then flavored with coffee. Blending with an immersion blender creates a smooth texture, silkier than oat porridge. The topping adds pan-fried squash cubes, lightly toasted almonds and crunchy cacao nibs.

A warm, grain-free bowl

This variation answers a simple craving: a warm, filling bowl in the morning, without grains. Ground flaxseed is ideal for this: once hydrated, it thickens without lengthy cooking and provides a dense base, ready for bold flavors.

Thick coconut milk creates a creamy base, coffee highlights the toasted notes and keeps the sweetness in check, erythritol sweetens, and squash adds a vegetal note and warm color. Compared with oat porridge, there is less of the chewiness of the oats and more of a velvety creaminess.

The appeal of this bowl lies in its contrasts: a silky base, tender squash, crunchy almonds and intense cacao. The coffee-coconut flavor profile makes it a bittersweet, nourishing breakfast, with the same comforting quality as a warm congee.

The main ingredients

Ground flaxseed, 3 to 4 tablespoons, forms and thickens the base; grinding helps it disperse evenly and avoids a texture dominated by whole seeds. Thick canned coconut milk, 150 ml, adds creaminess and fat, with more body than a coconut milk beverage. Coffee, 200 ml, brings its characteristic bitterness and remains the key reference point for balancing the flavors.

Erythritol, 2 tablespoons, sweetens without table sugar and produces little browning, which suits squash cooked just until tender. The 75 g of diced squash adds sweetness and color, cut into small, even pieces; for a different texture, winter melon works well here. A handful of sliced almonds adds crunch and a toasted flavor; toast them separately, as you would for air fryer roasted hazelnuts.

A teaspoon of cacao nibs extends the roasted notes with a bitter, crunchy touch. An optional teaspoon of almond butter rounds out the finishing touches, and a pinch of salt balances the fat, bitterness and sweetness. Coconut oil is used to sauté the squash and subtly reinforces the coconut flavor.

Technique and serving tips

Serve the porridge piping hot, with the pan-fried squash and sliced almonds. Add small dollops of almond butter to finish, along with the cacao nibs. To keep it low-carb, it is best to avoid honey, syrups and sweetened granola.

If there are leftovers, cool the base quickly, keep the toppings separate and reheat gently while stirring. Allow approximately 615 kcal per serving, a figure that varies depending on the squash, nuts and amount of erythritol.

Ingredients

  • 200 ml coffee about 2 cups of filter coffee
  • 150 ml coconut milk thick, canned
  • 3 to 4 tablespoons flaxseeds
  • 2 tablespoons erythritol
  • 75 g squash diced
  • 1 handful flaked almonds
  • 1 teaspoon cacao nibs
  • 1 teaspoon almond butter
  • 1 pinch Celtic sea salt or Himalayan pink salt
  • coconut oil for sautéing the squash

Instructions

  • Grind the flaxseeds or crush them in a mortar (I bought a small electric coffee grinder for this). Leave them to soak in the (thick) coconut milk (for at least 10 minutes). You can do this directly in the small saucepan you will use later. Mix well.
    150 ml coconut milk, 3 to 4 tablespoons flaxseeds
  • Brew some coffee; you will need about 2 regular cups. For a stronger flavor, use a little more and reduce the coconut milk by the same amount.

  • Toast a handful of flaked almonds in a frying pan, then set aside.

  • Cut the squash into small pieces and sauté it in the frying pan with a spoonful of erythritol and a little coconut oil.

  • Warm the coconut milk with the flaxseeds (the mixture should already have thickened a little). Add the coffee and a spoonful of erythritol. Stir briefly. Then blend with an immersion blender until creamy.

  • Pour the porridge into a bowl and top with the sautéed squash and flaked almonds. If desired, add a small spoonful of nut butter and the cacao nibs.
