What is watermelon and feta salad?
Watermelon and feta salad combines raw ingredients around a simple contrast: the sweet fruit juices and the saltiness of the cheese added when plating. Cucumber brings a refreshing crunch, red onion a subtle bite, mint an instant herbal note, and olive oil ties everything together without weighing it down.
How you cut the ingredients matters just as much as the ingredient list. Cut the watermelon and cucumber into pieces that are easy to pick up together on a fork, slice the red onion into thin half-moons, and tear the mint by hand rather than chopping it to preserve its aromatic oils. Add the feta at the end, crumbled over the top, so it stays visible and crumbly.

A summer setting and the spirit of the recipe
This salad belongs on a summer table, when watermelon, cucumber and fresh herbs are at their seasonal best. When temperatures rise, a quick, cold, no-cook starter is ideal. For a similarly refreshing option, try a wakame salad.
Serve it as a starter or alongside grilled dishes, fish or eggs. Its balance is what makes it work: sweetness, saltiness, crunch and plenty of freshness. The recipe allows for a few adjustments, such as a plant-based alternative to feta or a few Kalamata olives to accentuate the salty notes.
The main ingredients
For 2 people, you will need 150 g of watermelon, the juicy, sweet base of the salad: choose one that is ripe but still firm, as overly soft flesh falls apart and releases a lot of water. The 75 g of feta provide a salty contrast and a touch of dairy richness, with a texture that is both creamy and crumbly. Since feta already adds saltiness to each bite, extra salt is not necessarily needed.

A piece of cucumber about 5 cm long is enough to add crunch and temper the sweetness of the fruit. Finely sliced red onion stays subtle, while a small handful of fresh mint, torn by hand, is added just before serving. Extra virgin olive oil is the main dressing; the five optional Kalamata olives add a deeper saltiness, but watch out for the pits.
For other fresh dressings, take a look at a Thai dressing or a Chinese dressing, which play on the same balance of acidity and saltiness.
Tips for success and serving
Success comes down to two steps: toss gently and add the feta at the last minute. Lightly toss the watermelon, cucumber, onion, oil and some of the mint, reserving the feta for the finishing touch, crumbled directly over the plates. The right texture is easy to recognize: the ingredients glisten with oil, with a little natural juice at the bottom, without swimming in liquid.

Serve the salad immediately after assembling; to prepare ahead, keep the components separate in the refrigerator and save the feta and mint for the end, as freezing would damage the raw textures. For other cold dishes to serve straight away, consider hiyayakko, som tam or kinilaw. For other cold sides, a Japanese cabbage salad or an okra salad rounds out the plate nicely, at around 7 g of net carbs per serving.
