Gluten-Free Pistachio Flan Tart

When you cut into it, the filling stays tender, almost wobbly, with the pistachio coming through clearly after the vanilla. It’s made without gluten or lactose, without losing what makes this dessert special. This recipe joins my other gluten-free cakes and desserts.

What is a gluten-free, lactose-free pistachio flan tart?

It’s a baked custard tart, made here with a crumb crust rather than shortcrust or sweet pastry. That’s exactly what makes it so easy to put together: all the base needs is fine crumbs and melted butter, followed by a short chill to firm up.

The filling works like a vanilla pastry cream. Here, the pistachio custard is made the same way, then the pistachio paste is added off the heat. Oat milk and plant-based butter keep the dessert lactose-free.

The finished texture shouldn’t be overly firm. The top sets and colors, sometimes browning deeply in spots, but the center should still wobble when it comes out of the oven. After chilling, you’ll get a clean slice while keeping that soft middle.

The main ingredients

For the base, you can use gluten-free, lactose-free graham-style cookies, or even cake scraps, as long as they meet the same requirements. Chef Rommel Reyes uses leftover gluten-free chocolate sponge cake, which saves you from buying extra cookies.

If you’re using sponge scraps, cut them into small pieces, then bake and dry them at 150°C for about 30 minutes. Once fully dry, blitz them in a food processor, just as you would cookies. In both cases, you’re aiming for fine crumbs before mixing them with the melted butter.

Mix the fine crumbs with melted plant-based butter, then press them firmly over the base and sides of a springform pan or entremets ring. The 15-minute chill in the refrigerator isn’t just for show: it helps the crust set and firm up before filling.

For the filling, oat milk provides the liquid base. Egg yolks, sugar, vanilla, and cornstarch make up the custard, and pistachio paste brings the final flavor. If you have time, make the pistachio paste yourself; otherwise, a good store-bought version that is gluten-free and lactose-free will work just as well.

A fully vegan version is possible too. For the base, use the baked and dried sponge mentioned above or vegan, gluten-free graham-style cookies. For the pistachio custard, start with a vegan pastry cream and a 100% pistachio paste that is both vegan and gluten-free.

Technical pointers and pitfalls to avoid

This recipe comes down to two things: a well-chilled crust and a perfectly smooth custard. Nothing is difficult, but each step matters, and if you rush them, the texture will show as soon as you slice it.

Making a crust that holds together

The crumbs should be fine, not coarse. You can crush them by hand, but a food processor is quicker, whether you’re starting with cookies or dried sponge cake. Then mix the fine crumbs with the melted butter and press the mixture firmly over the base and sides of the pan.

You can use a springform pan or a ring mold. What matters is pressing firmly enough for the crust to hold together. After that, chill it in the refrigerator for at least 15 minutes so it sets and firms up. It needs to stay cold when you pour in the custard.

Cooking the custard gently

Start by heating the oat milk in a saucepan. In a separate bowl, mix the egg yolks, sugar, vanilla, and cornstarch, then pour in ⅓ of the hot milk first. Whisk until the sugar and cornstarch are fully dissolved; this step really matters.

Pour everything back into the remaining hot milk and cook over low to medium heat. Stir constantly until the custard thickens. Once you take the pan off the heat, add the pistachio paste and the cold plant-based butter.

For an even smoother texture, blend the custard with an immersion blender. Transfer it to a completely dry container, cover it directly with plastic wrap, and chill it in the refrigerator for at least 1 hour, ideally overnight.

Baking and final set

Before baking, preheat the oven to 180°C. Whisk the chilled pistachio custard to loosen it, then pour it over the cold crust. Tap the pan a few times to release any air bubbles, then smooth the surface with a large spoon or offset spatula.

Bake for 40 to 50 minutes. The top should brown lightly, almost scorched in places, while the center still has a wobble. That contrast is what gives the tart its ideal texture after chilling.

Let the tart cool first, off the baking sheet, then refrigerate it for at least 4 hours, ideally overnight. Just before serving, brush the top with a warm, clear neutral glaze.

Storage

The most important thing here is the chilling time, both before and after baking. The crust needs at least 15 minutes in the refrigerator before filling, the custard needs at least 1 hour, ideally overnight, and the baked tart needs another 4 hours at minimum, ideally overnight as well. In short, this is a dessert that benefits from being made ahead.

Ingredients

  • 250 g homemade gluten-free, dairy-free graham crackers
  • 80 g gluten-free, lactose-free unsalted butter melted
  • 750 g oat milk barista-style, gluten-free
  • 75 g pistachio paste
  • 130 g sugar
  • 60 g cornstarch
  • 165 g egg yolks about 8 large egg yolks
  • 1 bean vanilla

Instructions

Crumb Crust

  • Crush the graham crackers into fine crumbs.
  • Pulse them in a food processor to speed things up.
  • Combine the crumbs and melted butter in a mixing bowl.

Pistachio Pastry Cream

  • Heat the oat milk in a saucepan.
  • Whisk the egg yolks, sugar, vanilla, and cornstarch together in a bowl.
  • Whisk one third of the hot oat milk into the egg mixture until the cornstarch and sugar are fully dissolved.
  • Pour the mixture back into the remaining hot milk and cook over medium-low heat, stirring constantly, until thickened.
  • Remove from the heat.
  • Add the pistachio paste and cold vegan butter.

  • Whisk the chilled pistachio pastry cream until loosened.
  • Pour it over the chilled crumb crust.
