There’s that moment when the skin starts to sizzle in the basket and the aroma of smoked paprika fills the whole kitchen. Air fryer chicken thighs deliver exactly that: delicate skin that crackles when you bite into it, dark meat that stays juicy, and that hint of rotisserie flavor you thought was reserved for a Sunday roast. No vat of oil, no oven heating up the apartment for an hour. It seems like an everyday cut, right up until the first bite.

What are air fryer chicken thighs?

In French, cuisse de poulet most often refers to the whole leg, made up of the thigh and the drumstick. At the butcher’s, the two are also sold separately: the thigh is the meaty upper part, and the drumstick is the lower part. For the air fryer, choose bone-in, skin-on pieces. The bone slows heat penetration and helps keep the meat juicy; the skin brings the crispness.

Dark meat can handle what breast meat cannot. It is rich in collagen, and 74ย ยฐC at the center is the food-safe temperature to reach, one the thigh can take without drying out, unlike breast meat, which quickly turns chalky.

Beyond that, the collagen melts into gelatin and coats the fibers, which is why the texture stays supple rather than rubbery. It’s the easiest cut to get right in an appliance that cooks hot and fast.

Rotisserie-style crispness, straight from the basket

France has a strong roast chicken culture, and the skin is a big part of it. The air fryer recreates that in a basket just a few liters in size. Its fan drives a high-speed stream of air against the surface of the meat and sweeps away the thin layer of humid air surrounding it. Browning therefore starts much earlier than in the oven, where that layer acts as a barrier.

You can see the difference on the timer: browning comes faster than with a conventional convection oven. The trade-off is that the surface gets a head start over the center. That’s why flipping halfway through cooking and finishing skin-side up help the two cook at the same pace.

Basket models heat mainly from above, which makes flipping useful. Oven-style models, with open racks, let the air circulate more freely but brown faster on the upper levels. In both cases, keep the juices left at the bottom: rendered chicken fat, cooking juices, and spices make a better topping for baby potatoes than many sauces. The main ingredients for air fryer chicken thighs

Four bone-in, skin-on chicken thighs, a tablespoon of olive oil, and that’s all you need for the base. The oil is not there to fry; it acts as glue. Without it, the spice blend ends up at the bottom of the basket. A thin coating is enough, and the thighs will render their own fat as they cook.

The blend that coats the skin is built on seven spices and one ingredient that isn’t a spice at all: cornstarch. It creates that thin, brittle crust by absorbing the skin’s residual moisture. Smoked paprika, garlic powder, onion powder, and dried oregano form the aromatic base, while black pepper and a pinch of cayenne bring the heat. These dried seasonings hold up to the heat, whereas fresh garlic would burn at 200 ยฐC.

Salt deserves a little attention. The original recipe uses kosher salt, which is coarser and less salty by volume than fine French table salt. If you use fine salt, reduce it by about one-quarter. Loosen the skin with your fingertips and season underneath too; the meat will be noticeably more flavorful. Fresh herbs, meanwhile, burn in the basket: dried thyme and rosemary hold up well, while parsley and chives are best added after cooking.

Technical tips for crackling skin

Three details make all the difference. Pat the skin dry with paper towels before oiling it, because even a trace of surface moisture turns to steam and prevents browning until it evaporates. Preheat thoroughly for three minutes at 200 ยฐC; otherwise, the thighs will release moisture while the appliance is still coming up to temperature. And leave space between the pieces: if two thighs touch, they steam where they meet and stay soft in that spot.

The 22-minute guideline is for a medium thigh weighing 200 to 250ย g. Allow 18 to 22 minutes for 150 to 180ย g, 30 to 34 minutes for 300 to 350ย g, and switch to 180ย ยฐC for 36 to 40 minutes beyond 400ย g so the center cooks through before the skin burns.

The best test is still a thermometer inserted into the thickest part without touching the bone, which can skew the reading upward; if you don’t have one, pierce down to the bone and make sure the juices run clear.

  • 4 chicken thighs bone-in, skin-on

Instructions

Preparation

  • Remove the thighs from the refrigerator and let them come to room temperature.

  • Coat the chicken thighs generously with the spice mixture.

Air Fryer Cooking

  • Preheat the air fryer to 200 ยฐC for 3 minutes.
  • Arrange the thighs skin-side up in a single layer, making sure they do not touch.
  • Cook for 10 minutes.
  • Flip the thighs over.
  • Continue cooking for 10 minutes.
  • Turn the thighs skin-side up again and cook for 2 more minutes to finish crisping the skin.
  • Check that the thickest part of the thigh reaches 74 ยฐC without touching the bone. Cook for 1 to 2 minutes longer if needed.

Finishing

  • Let the chicken rest for 2 to 3 minutes outside the air fryer.
  • Serve right away.

Notes

For extra-crispy skin: preheating the air fryer (3 min at 200 ยฐC) and thoroughly drying the skin are essential. The cornstarch absorbs any remaining moisture and helps create a thin, shatteringly crisp crust.
Batching: cook the thighs in a single layer, without letting them touch. If needed, cook in two batches (the first batch reheats quickly at the very end).
Doneness: the true indicator is internal temperature: at least 74 ยฐC, measured in the thickest part without touching the bone. Adjust the cooking time according to size.
Salt: the quantity given is for kosher-style salt; if using fine salt, reduce it by about one-quarter.
Sweet glazes: avoid sweet marinades or glazes before cooking at 200 ยฐC, as they darken quickly. If desired, apply them only during the last 3 minutes.
Resting: a 2- to 3-minute rest allows the juices to redistribute.
Storage: keep for up to 4 days in the refrigerator in an airtight container. Reheat in the air fryer, skin-side up, for 5 to 7 minutes at 185 ยฐC.
