When I was little, I grew up on my mom’s brownies. She made them for every occasion: bad weather? Brownies. Guests coming over? Brownies and cookies for dessert. A birthday? Brownies.

Anyway, that’s enough storytelling. This recipe is so easy to make that you can honestly throw it together on a whim; most of the time, you already have all the ingredients in the pantry. And believe me, that is very dangerous…

Tips for Perfect Brownies
It’s essential to make sure the butter and chocolate mixture isn’t too hot before adding it to the rest of the ingredients. After all, the rest of the batter contains eggs, and if those eggs start cooking before the brownies even go into the oven… it’s not a pretty sight.
In practice, since you melt everything over low heat, the mixture cools down fairly quickly, so no stress.
Second tip: let’s talk baking time, ovens, and pan size. Every oven is different; some simply perform better than others. Unfortunately, you’ll need to keep an eye on your brownies and figure out your own ideal baking time (in my family, we went through a phase where we liked them almost raw…oops).

Beyond the oven itself, the size of the pan you use can also affect the baking time, since the thickness will inevitably vary. These details won’t completely ruin your brownies, but they’re worth keeping in mind.
Also remember that they’ll firm up as they cool, even if they look “undercooked.”
