Looking for a neat opera cake that slices cleanly, without butter or wheat flour? It all comes down to thin, precise layers: almond joconde sponge, coffee, dark chocolate, and a smooth, glossy finish. Instead of buttercream, you make a whipped coffee ganache that feels lighter on the palate. Everything is measured by weight, so you can get it right on the first try. This recipe joins my other gluten-free cakes.

What Is a 7-Layer Vegan Opera Cake?
Opera cake is a classic French layered dessert made with almond sponge cake (joconde), coffee, and chocolate. In this version, chef Rommel Reyes keeps the signature layers but removes the wheat and dairy: the base is a gluten-free sponge, and the fillings are whipped ganaches made with plant-based cream. Instead of coffee buttercream, he uses a whipped coffee ganache to keep the texture lighter and the sweetness more restrained. The top is finished with a thin dark chocolate glaze poured over a thoroughly chilled cake.
Key Ingredients
The sponge starts with an all-purpose gluten-free flour blend, which works well for a joconde sheet and replaces the wheat flour. Almond flour brings nutty flavor and structure, while vegan meringue gives the sponge its lift, as long as you fold it in gently without deflating it. Barista-style oat milk mixed with lemon juice thickens before being added to the batter, and melted vegan butter smooths everything out.
For the layers, Rommel uses 70–80% dark chocolate for both ganaches, along with a plant-based whipping cream such as Alpro or Silk Double Whip Cream, which works especially well in ganache. The coffee ganache is made with vegan white chocolate: the recipe uses Felchlin, but any vegan white chocolate with at least 38% fat will do.
The syrup is a simple coffee syrup made with water, sugar, and instant coffee, used to moisten the sponge layers during assembly. The glaze combines plant-based cream, dark chocolate, and glucose for a thin, even finish.

Technical Tips and Common Pitfalls
Weigh everything. This recipe is designed by weight for precision, and if you need to adapt it, use a unit converter rather than guessing by eye.
Whipped Coffee Ganache
Start by melting the vegan white chocolate. Pour in the still-hot espresso or strong coffee, then stir until smooth. Add the well-chilled plant-based cream and mix again. Cover directly on the surface and refrigerate for 2–3 hours. Once thoroughly chilled, whip until firm enough to spread.
Whipped Chocolate Ganache
Bring the plant-based cream briefly to a boil in a saucepan, then remove it from the heat. Pour the hot cream over the chocolate to melt it, then stir until the ganache is smooth and glossy. Add the cold plant-based cream, mix well, cover directly on the surface, and chill for 2–3 hours before whipping to a firm consistency.
Joconde Sponge Sheet
Preheat the oven to 170°C and line a flat baking tray with parchment paper. Mix the oat milk and lemon juice, then set aside to thicken. Combine all the dry ingredients and sift them before mixing for a smoother, more even batter.
Prepare the vegan meringue separately, adjusting the amount to what you need. Pour the oat milk–lemon mixture into the dry ingredients, add the melted vegan butter, and mix until smooth. Fold in the meringue gently, in two additions, to keep as much air as possible in the batter.
Spread the batter into a sheet about ½ cm thick, then bake for 14 to 16 minutes, just until lightly golden. Let it cool completely before cutting; otherwise, the edges may tear and the layers can shift during assembly.
Coffee Syrup
Bring the water and sugar to a boil, remove from the heat, and stir in the instant coffee. Set aside. It should be ready by the time you start assembling the layers.
Chocolate Ganache (Unwhipped Layer)
Heat the plant-based cream until it just begins to boil, then remove it from the heat. Pour it over the chocolate and emulsify with an immersion blender until smooth and glossy. Cover and keep warm so it stays spreadable during assembly.
Assembling the 7 Layers
Cut three joconde sheets to fit the frame: 24×24 cm, matching the square metal mold. If you use a different mold, cut the sponge to match its shape; otherwise, the edges will never line up neatly.
Place the first sheet in the bottom of the frame, then soak it generously with coffee syrup (1st layer). Spread the chocolate ganache evenly over the top (2nd layer), then add the second sheet and moisten it again with syrup (3rd layer). Spread half of the whipped coffee ganache over it (4th layer), place the third moistened sheet on top (5th layer), then spread the remaining whipped coffee ganache over that (6th layer). Finish with the whipped chocolate ganache as the 7th layer.
Smooth the top with an offset spatula, then remove any excess from the sides for clean, sharp edges. Freeze for at least 2–3 hours before glazing.
Chocolate Glaze and Finishing
Bring the plant-based cream and glucose to a boil, remove from the heat, then pour over the dark chocolate. Blend with an immersion blender until smooth and free of air bubbles, then reheat the glaze to about 40°C before using.
Place the opera cake, still frozen, on a rack, then pour a thin layer of warm chocolate glaze over the top. Remove the metal frame. If you like, return the cake to the freezer for 30 minutes to set the glaze before slicing.

Instructions
Whipped coffee ganache
- Melt the white chocolate in a bowl.
- Add the hot espresso and stir until smooth.

- Add the cold whipping cream and mix well.
- Cover with plastic wrap.
- Refrigerate for 2-3 hours.
- Whip until firm before using.

Whipped chocolate ganache
- Bring the whipping cream just to a boil in a saucepan.
- Remove from the heat.
- Pour the hot cream over the chocolate to melt it.

- Stir until smooth and glossy.

- Add the cold whipping cream and mix well.

- Cover with plastic wrap.
- Refrigerate for 2-3 hours.
- Whip until firm before using.
Joconde sponge
- Preheat the oven to 170°C (338°F).
- Line a flat baking sheet with parchment paper.
- Mix the oat milk and lemon juice together.
- Set aside to thicken.
- Whisk together all the dry ingredients.
- Sift the dry ingredients.
- Prepare the vegan meringue.
- Adjust the quantity as needed.
- Pour the oat milk and lemon mixture into the dry ingredients.

- Add the melted vegan butter.
- Mix until smooth.
- Gently fold the meringue into the joconde batter in two additions.
- Spread the batter on the sheet in a 1/2 cm (0.2 in) layer.

- Bake for 14 to 16 minutes, or until lightly golden.
- Let the sponge cool before cutting.
Coffee syrup
- Bring the water and sugar to a boil in a saucepan.
- Remove from the heat.
- Stir in the instant coffee powder.
- Set aside.
Chocolate ganache
- Heat the whipping cream in a saucepan until it just begins to boil.
- Remove from the heat.
- Pour over the chocolate.

- Blend with an immersion blender until smooth and glossy.

- Cover.
- Keep warm.
Cake assembly
- Cut the joconde into three 24 x 24 cm (9.5 x 9.5 in) squares, the same size as the square metal mold.

- If you’re using different-sized molds, cut the sponge layers to fit.
- Place one sponge layer in the bottom of the mold.
- Generously soak with coffee syrup (1st layer).

- Spread the chocolate ganache evenly over the sponge (2nd layer).

- Place the second sponge layer, soaked with coffee syrup, on top (3rd layer).
- Spread half of the whipped coffee ganache over the top (4th layer).

- Place the third sponge layer, soaked with coffee syrup, on top (5th layer).
- Spread the remaining whipped coffee ganache over the top (6th layer).
- Spread the whipped chocolate ganache over the top to form the 7th layer.

- Smooth the top with an offset spatula.
- Remove any excess ganache from the sides.
- Freeze for at least 2-3 hours.
Chocolate glaze
- Bring the whipping cream and glucose to a boil in a saucepan.
- Remove from the heat.
- Pour the hot cream over the dark chocolate.
- Blend with an immersion blender to remove any air bubbles and smooth the glaze.

- Warm the glaze to about 40°C (105°F) before using.
- Place the frozen opera on a wire rack.
- Coat the top with a thin layer of warm dark chocolate glaze.

- Remove the metal cake mold.
- If needed, freeze for 30 minutes to set the glaze before slicing.
