Green, flexible and tender, this spinach wrap rolls up without breaking and lets its filling shine. The wheat tortilla is replaced by a thin, oven-baked sheet made from 2 eggs blended with spinach. What is a spinach wrap?
A wrap is a flexible base that is filled, then folded or rolled around its contents. Here, the low-carb version is made with 2 eggs and 80 g of finely blended spinach, with no flour or added binder, as the spinach is part of the base itself. The eggs bind the mixture and keep it flexible enough to roll, while the spinach adds a vibrant colour, a mild vegetal note and a little moisture to prevent a dry texture.
The liquid mixture is poured into a baking tin lined with baking paper, then baked for 15 minutes at 200 °C until the centre is set. The aim is a thin omelette rather than a flatbread, with a tender, slightly soft texture. The base alone contains 2 g of net carbs per serving, with the final nutritional balance depending on your choice of filling.

The idea behind this version
This spinach wrap adapts the rolled format to a low-carb or ketogenic diet, without a flour-based flatbread. The idea is simple: replace the classic tortilla with a sheet of eggs and spinach, using everyday ingredients, with no dough to knead or flatbread to roll out.
Its appeal lies in this quick substitution. In just a few minutes, the oven turns a very simple mixture into a flexible base, ready for cold or hot fillings. It is a good option for a meal ready in 20 minutes, a protein-rich packed lunch or a light dinner.
The main ingredients
The 2 eggs give the wrap its structure. As they set during baking, they hold the base together while keeping it flexible enough to roll; if overcooked, they become firm and dry out the sheet. The 80 g of spinach colour the mixture, adding a mild vegetal flavour and a soft texture.

If the spinach has been washed, drain it thoroughly to limit excess moisture. Blending it very finely eliminates large pieces, which create weak spots and make rolling more difficult. A pinch of salt is all you need to season the base.
Technique and serving tips
The baking guideline is simple, 15 minutes at 200 °C: the sheet should be set right through to the centre, with no liquid patches. Do not aim for a golden crust, as overbaking firms up the eggs and reduces flexibility. The size of the tin matters just as much as the temperature: a 28 × 19 cm tin gives a balanced thickness; in a smaller tin, the layer becomes thicker and harder to roll, while in a larger one, it spreads thinner and risks drying out. Blend the spinach very finely with the eggs, spread the mixture evenly, and line the base with baking paper, preferably PFAS-free, to make it easier to remove.

After baking, a short rest makes handling easier; peel away the paper gradually and handle the sheet gently while it is hot, as it lacks the elasticity of a gluten-based dough. Avoid overfilling: well-drained roasted pepper, goat cheese, smoked ham and garden cress add creaminess, a salty note and a peppery touch, without overly thick layers or very wet ingredients. To get ahead, keep the cooled base in a sealed container in the refrigerator, with the fillings stored separately, then warm it gently before rolling.
