If you’re after a pecan pie with all the soft texture and toasted nutty flavor, but none of the sugary heaviness of the classic versions, this one delivers. The filling stays dense, smooth, and deeply nutty, with a crumbly crust that breaks cleanly under your fork.

What is this gluten- and lactose-free pecan pie?
It’s an American-style pie built around a pecan filling, but with less sugar than most traditional versions. The idea is simple: no corn syrup, no white sugar, and more room for the flavor of the pecans to come through. The result is still sweet and rich, but with a cleaner finish.
Leaving out the corn syrup gives the pie a less sticky texture than a classic pecan pie, while keeping the soft, nutty character you expect. To make up for that viscosity, the filling starts with a cooked base of cornstarch, water, muscovado sugar, and honey. This version is also gluten-free and lactose-free, with a crust inspired by a lightly sweet shortcrust pastry.
The technique that truly replaces the corn syrup is this cornstarch roux. Cooked with water, muscovado sugar, and honey, it gives the filling that dense, slightly sticky quality you want in a pecan pie, without relying on corn syrup.
Main ingredients
The crust is made with an all-purpose gluten-free flour blend, water, plant-based butter, salt, and 5 g of sugar. Because it’s only lightly sweetened, it works just as well for savory as for sweet baking, much like a classic shortcrust pastry. Once baked, it turns slightly savory and crumbly, which suits such a rich filling beautifully.
If you want to cut the sugar further, a dough with no added sugar is one option. You can also use a low-carb flour blend. Another idea is to replace 10% of the flour with almond flour for a nuttier note that echoes the pecans.
In the filling, muscovado sugar stands in for brown sugar. It’s less refined and retains more molasses, which pushes the caramel notes a little further. The honey adds a touch of stickiness without overpowering the rest.
Cornstarch gives the filling structure without relying on corn syrup. The eggs set it, while the cinnamon, nutmeg, lemon zest, and salt keep the sweetness in balance. Chopped pecans go into the filling, and whole pecans are arranged on top to finish the pie.
You can use a zero-calorie sweetener in place of the sugar, but it doesn’t taste good in this recipe, so keep that in mind before heading down that road.

Technical tips and pitfalls to avoid
Measure everything in metric for the best accuracy. With a gluten-free crust and an egg-set filling, precision really matters. Avoid rough conversions if you want the same texture.
For the dough
Start by mixing the gluten-free flour, salt, and sugar, then rub in the cold plant-based butter by hand or in a mixer. The butter must stay cold from start to finish at this stage. That’s what helps the dough stay crumbly instead of turning into a heavy mass.
Add the water gradually, just until the dough comes together. If you pour it all in at once, you risk overhydrating it. As soon as it holds together, transfer it to a cold, lightly floured work surface and knead it very briefly to form a ball.
Then shape it into a square with rounded corners before wrapping and chilling it for 30 to 45 minutes. This shape makes it easier to roll out. Always roll the dough while it’s very cold, to a thickness of 3 to 4 mm, between two sheets of parchment paper so it doesn’t stick.
If you have one, a dough guide strip will help you roll it to an even thickness and work more quickly. Line a 23 cm tart pan, press the dough firmly into the sides, then trim the edges. Prick the base with a fork and return the crust to the refrigerator while you prepare the filling. The filling should go into a cold crust, never a lukewarm one.
For the filling
The key step in this recipe is the cornstarch roux. Mix the cornstarch, water, and muscovado sugar in a small saucepan, then cook over medium-low heat, stirring constantly. Stop as soon as the mixture thickens and turns glossy.
Once it reaches that texture, remove it from the heat immediately and stir in the plant-based butter. Let it cool before adding it to the eggs. If the roux is still warm, it will throw off the mixture and change the final texture.
Whisk the eggs with the salt, nutmeg, cinnamon, and honey, then whisk in the cooled roux. Fold in the chopped pecans last. Pour the filling into the cold tart shell and smooth the surface so the pieces are evenly distributed.
Assembly and baking
Arrange the whole pecans in circles, starting at the edge and working toward the center. It’s a simple step, but it gives the pie a neat, even finish once baked. Bake in a preheated 170 °C oven for 40 to 45 minutes.
Let the tart cool to room temperature before chilling it. If you like, brush it with a neutral glaze or a little warmed honey. Then refrigerate it for a few hours.
Storage
Serve this tart cold, after a few hours in the refrigerator. It’s even better the next day, well chilled, once the filling has had time to set completely.

- Knead briefly to form a ball.
- Shape the dough into a rounded square.

- Wrap in plastic wrap and chill for 30-45 minutes.
- Roll out the chilled dough to about 3-4 mm thick between sheets of parchment paper to prevent sticking.

- If desired, use dough guide strips while rolling it out.
- This will help ensure an even thickness and speed up the process.
- Fit the dough into a 23 cm tart pan.

- Press it into the sides, trim the edges, and prick the bottom a few times with a fork.

- Refrigerate while you prepare the filling.
Pecan filling
- Mix the cornstarch, water, and muscovado sugar in a small saucepan.

- Cook over medium-low heat, stirring constantly, until the mixture thickens and turns glossy.

- Remove from the heat once thickened, then stir in the dairy-free butter.

- Let cool.
- Whisk together the eggs, salt, nutmeg, cinnamon, and honey in a large bowl.

- Add the cooled syrup mixture and mix well.
