
Stir-fried noodles with vegetables

Ingredients
- 300 g of pre-cooked noodles
- 1 handful of bean sprouts
- 1 sliced onion
- 3 cloves garlic minced
- 1 tablespoon ginger minced
- 1 tablespoon of white part of spring onions, minced and separated from the green parts, sliced
- 5 leaves of Chinese cabbage, white and green parts separated and cut into strips
- vegetable oil for stir-frying
SAUCE
- 0.5 tablespoon of hoisin sauce
- 2 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 2 teaspoons cornstarch
- 0.5 teaspoon of salt
- 1 tablespoon sesame oil
Instructions
- In a bowl, prepare the sauce and cook the noodles
- Heat oil in a wok over high heat and add garlic/ginger/white parts of spring onions
- As soon as it browns, add onions, white parts of cabbage, bean sprouts
- Once they have sweated, add the green parts of the cabbage and the green parts of the spring onions and stir-fry for another 3 minutes.
- Add the noodles and sauce and stir-fry for a good 5 minutes or until the sauce evaporates and the whole dish is nicely browned

Made this tonight and swapped the bean sprouts for sliced bell pepper since that’s what I had on hand. Let it stir-fry an extra minute at the end to get more browning, and it turned out even better 😋
Made these veggie stir-fried noodles tonight and the kids absolutely devoured them, even the cabbage. They cleaned their plates and immediately asked for seconds 🙂
Made these stir-fried veggie noodles last night and my spouse kept saying how restaurant-worthy the sauce tasted, then asked if we can put it into the regular dinner rotation 🙂
Was not expecting my picky partner to go back for seconds, but these stir-fried noodles disappeared fast and the sauce was such a hit 😋
