Air Fryer Hard-Boiled Eggs

The shell cracks under your thumb and slips off in one piece. The white stays tender, the yolk is firm, and there’s no greenish ring. No pot boiling over, no water to watch: just place the eggs in the air fryer basket and let the timer do the work. They’re perfect in salads, on buttered toast, or turned into deviled eggs. It sounds like a gimmick until you peel the first one.

What Is an Air Fryer Hard-Boiled Egg?

It’s an egg with a fully set yolk, cooked in its shell in the appliance’s circulating hot air rather than in boiling water. In French cooking, people distinguish between an egg served in the shell with a runny yolk, a soft-boiled egg with a yolk that’s still creamy, and a hard-boiled egg with a fully set yolk.

Three things make this recipe work: eggs taken out of the refrigerator 20 to 30 minutes ahead, 15 minutes at 130 °C with no preheating, and a bowl of very cold water with 8 ice cubes ready before the timer goes off. Arrange the eggs in a single layer with space between them, never stacked.

From the Pot to the Basket

Hard-boiled eggs are a staple of home cooking: inexpensive protein that’s easy to portion and pack. For generations, the method barely changed: simmering water and a timer.

The basket version comes from compact kitchens, where fewer dishes is always a plus. The heat comes from air rather than water, building gradually all the way to the center. The results are reliable as long as you use the same appliance, the same egg size, and the same settings.

The Main Ingredients for Air Fryer Hard-Boiled Eggs

Start with 4 medium eggs. Consistency matters more than brand: if the eggs are the same size, 15 minutes at 130 °C will give you four identical yolks. If the basket is very full, add 1 extra minute.

A bowl of very cold water stops the cooking. Once an egg comes out of the basket, it keeps cooking from residual heat: without a bath, an egg timed for 13 minutes will end up like one cooked for 15.

8 ice cubes keep the bath cold to the very end. That chill contracts the white inside the shell, loosens the membrane, and makes peeling clean and easy. If the ice melts, add more; lukewarm water won’t stop the cooking.

Technical Notes

Keep the temperature the same and adjust only the time. At 130 °C: 9 minutes for a runny yolk, 11 for a creamy soft-boiled egg, 13 for a yolk that’s tender but set, and 15 for the classic hard-boiled egg that slices cleanly.

Don’t go above 135 °C. At 180 °C, the shell heats faster than the egg inside, the air in the air cell expands too quickly, and the shell can burst. The air fryer cooking chart covers everything else you might want to cook in the basket.

Don’t preheat, either. Putting a cold egg into a scorching basket creates exactly the kind of thermal shock you want to avoid. Count the 15 minutes from a cold start.

Add 1 to 2 more minutes for large and extra-large eggs, and subtract 1 minute for small eggs. From one machine to another, the difference can be as much as 2 minutes: test one or two eggs first, then stick with that setting.

When it comes to peeling, the age of the egg matters more than technique. An egg laid the day before peels badly; eggs that are 5 to 10 days old peel much more easily. Tap the shell all over, roll the egg gently under your palm, and start at the wide end, where the air pocket sits.

Hard-boiled eggs keep for 7 days in the refrigerator if left in the shell, 3 days once peeled, and never more than 2 hours at room temperature. Don’t freeze them; the whites turn rubbery. To reheat, warm them in the basket for 2 to 3 minutes at 120 °C, never in the microwave.

  • Gently tap the shell all over, then roll the egg under your palm on the work surface.
  • Peel under a thin stream of cold water, starting from the wider end.

Notes

Cooking times at 130 °C (medium eggs): 9 min (runny yolk), 11 min (soft-boiled), 13 min (tender yolk), 15 min (classic hard-boiled egg). Just 1 minute can change the texture, so use a timer.
Temperature and preheating: Keep the air fryer at 130 °C (do not exceed 135 °C) and do not preheat it, to avoid thermal shock and cracked shells.
Ice bath is essential: It stops the cooking and makes the eggs easier to peel. If the water starts to warm up, add more ice cubes.
Peeling: Eggs that are 5 to 10 days old peel more easily. Start from the wider end (the air pocket).
Adjust for egg size: Add 1 to 2 min for L/XL eggs, subtract 1 min for small eggs; add 1 min if the basket is very full. Test with your particular model (variation of up to 2 min is possible).
Storage: Keep for up to 7 days in the refrigerator, in the shell, or 3 days once peeled, and never more than 2 h at room temperature. Do not freeze. To reheat, cook for 2 to 3 min at 120 °C in the air fryer.
