Chicken tenderloin is one of the least forgiving cuts of chicken : a strip 1 to 2 cm thick, almost fat-free, that goes from juicy to dry with just a minute too long. In the basket, it all comes down to 10 minutes at 200 °C : one tablespoon of oil to help the spices cling, a flip halfway through cooking, and 75 °C at the center as the only true benchmark.

What are chicken tenders ?

Chicken tenders are long, slender strips found beneath the chicken breast, each with a small tendon running through it. Lean and delicate, they cook in minutes and dry out just as quickly.

In the air fryer, this is not true frying. The oil helps the spices stick and transfer heat to the surface while the hot air browns the pieces. The goal : a nicely colored, fragrant exterior and an interior that is white throughout, with no pink left.

Main ingredients for chicken tenders

600 g of chicken tenders, one tablespoon of olive oil, one teaspoon each of paprika, garlic powder, and herbes de Provence, half a teaspoon of salt, and the same amount of pepper. That’s it, and chances are you already have everything in the cupboard.

Paprika adds color and gentle sweetness ; smoked paprika brings a hint of fire and char. Garlic powder distributes evenly without leaving burnt bits, unlike freshly grated garlic in such intense heat. Herbes de Provence rounds everything out, and the oil helps it all adhere : without it, the spices blacken against the basket and turn bitter.

Salt just before cooking. If you salt too far ahead, it draws moisture out of the meat and makes such a thin cut stringy. For a crispier version, coat the oiled tenders in breadcrumbs or panko, then spray the coating with a light mist of oil.

Technical tips

Pat the meat dry with paper towels before oiling it. Tray-packed tenders usually sit in a little juice, and that moisture turns to steam instead of letting the surface brown.

Preheat for 3 minutes at 200 °C. On a 10-minute cook, starting with a cold basket costs you almost a third of the total time, during which the meat warms through instead of searing.

Arrange in a single flat layer, with no overlap. A standard basket holds 500 to 600 g per batch ; beyond that, cook in two rounds. The air fryer cooking chart covers other sizes.

Flip after 5 minutes, piece by piece, using tongs rather than shaking the basket. Heat comes from above : without this step, the underside stays pale.

Check for 75 °C at the center of the thickest part. Add 1 to 2 minutes for thicker pieces, but never go beyond 12 minutes total, then let them rest for 1 minute out of the basket.

What to serve with them

Serve right away with honey mustard, a wing sauce, or barbecue sauce. For noticeably juicier meat, marinate the tenders in plain yogurt with paprika, garlic, and cumin : the cooking time stays the same. Cold and sliced into strips, they’re just as good tucked into a wrap or scattered over a salad the next day.

If cooking from frozen, allow 14 to 16 minutes at 200 °C for plain tenders, seasoning them after cooking rather than before : spices do not cling to frost. Reheat leftovers in the basket, never in the microwave.

  • Remove the chicken tenders from the package and pat them dry with paper towels.

Air Fryer Cooking

  • Preheat the air fryer to 200 °C for 3 minutes.
  • Arrange the tenders in the basket in a single flat layer, without overlapping.
  • Cook for 10 minutes at 200 °C.
  • Flip the tenders halfway through cooking, after 5 minutes.
  • Check that the center is no longer pink and that the internal temperature reaches 75 °C; add 1 to 2 more minutes for thick tenders, without exceeding 12 minutes total.

Finishing

  • Let the tenders rest for 1 minute outside the basket.
  • Serve immediately.

Notes

  • Never cook them longer than 12 minutes: chicken tenders go from juicy to dry very quickly.
  • Pat the chicken dry well before adding the oil: surface moisture turns to steam and prevents browning.
  • Preheat for 3 minutes at 200 °C: with such a short cooking time, a cold basket wastes a big part of the effective cooking time.
  • Flip halfway through cooking (5 minutes): because the heat comes from above, the underside will stay pale if you do not turn them.
  • Cook in a single layer, without overlap; if making more than 500–600 g, cook in two batches.
  • A reliable cue: 75 °C in the center of the thickest piece; otherwise, the meat should be white with no pink areas.
  • Season just before cooking: salting too early draws out moisture and can make the texture slightly stringy.
  • For extra tenderness: marinate in plain yogurt with paprika, garlic, and cumin, without changing the cooking time.
  • You can cook them from frozen: 14–16 min (plain) or 12–14 min (breaded), flipping halfway through; season after cooking if the spices do not stick well.
  • Let them rest for just 1 minute: this redistributes the juices without cooling the chicken.
  • Leftovers: store in the refrigerator in an airtight container and reheat in the air fryer rather than the microwave; cold, the strips are perfect in salads or wraps.
