Today I’m teaching you how to make the best burgers of your life! 😍 You’ll never want to pay $15 at a burger bar again. The secret to the classic American burger is finally revealed.
First, the meat, the most important part. No need to mix spices into it, you just need a fat content of at least 20%. With that, you’ll have the juiciest burger of your life, even cooked medium-well.
Cheddar: buy it in a block, not the industrial pre-sliced kind
SAUCE
– 2 tbsp butter
– 1 large onion, diced
– 2 tbsp mustard
– 1 tbsp Worcestershire sauce
– 3 pickles, finely chopped
– A handful of fresh chives, finely chopped
– 115g mayo
– 115g ketchup
– 1 tiny pinch of baking soda
1. Put the onions in a saucepan over medium heat with the butter and baking soda. Sauté for about 15 min until caramelized (the baking soda speeds up the reaction; normally it takes 45 min, this one’s on me 😘)
2. Mix all the ingredients in a bowl
ONION RINGS
– 3 onions, cut into rings
– 150ml chilled lager beer
– 100g wheat flour
– 50g cornstarch
– 3g baking powder
– Salt
– Optional: garlic powder, paprika, pepper
1. Mix all the dry ingredients: 2/3 wheat flour, 1/3 cornstarch, a pinch of baking powder, a pinch of salt.
2. Add the beer until you get a consistency similar to yogurt. ⚠ Don’t stir too hard or you’ll lose the beer’s bubbles ⚠ Lumps are fine
2b (optional) Down whatever’s left in the glass because you’re about to have a good time
3. Heat frying oil in a saucepan, dip the onions SEQUENTIALLY first in the batter, then drop them into the oil.
⚠ Don’t add too many at once, it’s often better to work in small batches
4. Take them out once they reach the color you want and set them to drain on a plate lined with paper towels
