Air Fryer Chickpeas

A can of chickpeas, a teaspoon of oil, and 18 minutes in the air fryer for a snack as crunchy as chips.

It’s 7 p.m., dinner is still an hour away, and you need something to snack on right now. A can of chickpeas, a kitchen towel, a drizzle of oil, and the air fryer does the rest.

They come out of the basket golden and piping hot, rattling when you shake the bowl, and the smoked paprika tossed over them clings on contact with the heat. Taste them too early and they seem like a failure, still soft in the middle. Give them one more minute, and they crackle between your teeth.

What are air fryer chickpeas ?

An air fryer is a compact convection oven: a heating element and a fan that blast hot air at high speed around the food. With cooked chickpeas, that dry heat does the job of deep-frying with a teaspoon of oil instead of a liter.

The surface dries out, a thin, brittle crust forms, and the center stays tender enough to create contrast. The chickpeas remain whole, with no mash or binder, unlike a legume pancake such as bindaetteok.

Drying isn’t a step in this recipe; it is the recipe. A chickpea straight from the can is soaked inside and out, and as long as that water is evaporating, the surface stays stuck at around 100 ยฐC and never browns. Pat them dry with a towel, leave them uncovered for a few minutes, then oil them.

The rest comes down to three things: preheat for 3 to 4 minutes so the basket is already hot, spread them in a single layer so the air can circulate, and give the basket one firm shake halfway through cooking. For an oil-free version, a very light dusting of cornstarch absorbs surface moisture, but too much leaves a chalky taste.

From Mediterranean snack to aperitif bowl

Roasted, salted chickpeas have long been part of Mediterranean and Middle Eastern snacking traditions, where the legume pairs naturally with salt, dry spices, and firm textures. The air fryer version is much more recent. It emerged in home kitchens, propelled by the appliance itself and by experiments shared on blogs and social media.

In France, it slipped effortlessly into aperitif culture as a protein-rich alternative to chips, served in a bowl alongside olives and radishes. It also earns its place on a platter with air fryer samosas or air fryer spring rolls, and works just as well in salads and blended soups, where it stands in for croutons.

Then comes the choice of chickpeas. Canned is fast and more than good enough, as long as you rinse and dry them until not a trace of moisture remains. Dried chickpeas need soaking for at least 8 hours, ideally overnight, then boiling before they go into the basket, but they give you full control over doneness. In both cases, the drying step is exactly the same.

The key ingredients for air fryer chickpeas

A 400 g can is enough for two and fits easily in a standard basket; two cans will need to be cooked in two batches. Rinsing under cold water isn’t just cosmetic: the canning liquid is salty and full of starch, and if you leave it on, the chickpeas turn sticky and scorch on the outside before they’re dry in the center. Use the rinse as a chance to remove any loose skins; otherwise they char long before the chickpeas do and leave behind black, bitter flakes. A lint-free kitchen towel dries better than paper towels, which leave fibers in the creases.

Oil and salt go on before cooking. Use 1 teaspoon of olive or avocado oil per can, no more : the goal is to dehydrate, not fry, and too much oil creates a film that slows evaporation and leaves the chickpeas soft and greasy. Salt works the other way, helping draw moisture to the surface.

Powdered spices, by contrast, go on at the end. Smoked paprika, cumin, garlic powder, and a pinch of cayenne are all fine powders: 18 minutes at 200 ยฐC will scorch them and turn them bitter.

Tossed with chickpeas that are still piping hot and lightly oiled once they’re out of the basket, they cling perfectly thanks to the residual heat. This is also the time for dry acidic seasonings, such as lemon zest or vinegar powder, which add brightness without softening the crust.

Technical cues for truly crispy chickpeas

The best cue is as much tactile as visual: they should be golden and firm to the touch. A chickpea that still yields still contains water and will turn rubbery as it cools, whereas 1 to 2 extra minutes of cooking are easy enough to fix. The classic mistake is tasting them while they’re still piping hot: they crisp as they cool, not in the basket, so take one out onto a plate, wait a minute, and taste that one.

The other problems are just as easy to spot: a pale, soft patch comes from an overcrowded basket or an overly gentle shake, and opening the basket every three minutes drops the temperature without improving anything. Once completely cool, the chickpeas keep in an airtight glass jar; never refrigerate them, as the refrigerator is humid. Ingredients

Chickpeas

  • 1 can of chickpeas 400 g, rinsed and thoroughly drained
  • 1 teaspoon of olive oil or avocado oil
  • 0.5 teaspoon of fine salt

Spices (add after cooking)

  • 0.5 teaspoon of smoked paprika
  • 0.25 teaspoon of ground cumin
  • 0.25 teaspoon of garlic powder
  • 1 pinch of cayenne pepper optional

Instructions

Preparation

  • Rinse the chickpeas under cold water, then drain them thoroughly.

  • Spread them out on a clean kitchen towel and pat them dry until completely dry; if possible, let them air-dry for a few minutes as well.
  • Transfer the chickpeas to a bowl, add the oil and salt, and toss well to coat.

Air Frying

  • Preheat the air fryer to 200 ยฐC for 3 to 4 minutes.
  • Add the chickpeas to the basket in a single layer.
  • Cook at 200 ยฐC for 15 to 18 minutes, shaking the basket vigorously halfway through cooking (around 8 to 9 minutes).
  • Check that they are golden and firm to the touch; cook for 1 to 2 minutes longer if needed.

Finishing

  • Transfer the piping-hot chickpeas to a bowl, add the smoked paprika, cumin, garlic powder, and cayenne pepper if using, then toss immediately.

  • Let cool completely before serving (they crisp up as they cool).

Notes

  • Drying is key: rinse, drain, pat dry with a towel, then let them air-dry for a few minutes before adding the oil; the drier they are, the faster they crisp up.
  • Remove any loose skins as you rinse the chickpeas (they burn before the rest).
  • Preheat for 3โ€“4 min at 200 ยฐC: this helps surface moisture evaporate quickly.
  • Cook in a single layer: an overcrowded basket traps steam and leaves the chickpeas soft.
  • Shake vigorously halfway through cooking; opening the air fryer too often lowers the temperature and extends the cooking time.
  • Check for doneness: they should be golden and firm to the touch; if in doubt, add 1โ€“2 minutes.
  • Add the spices after cooking (outside the basket): paprika, cumin, and garlic powder burn at 200 ยฐC.
  • Storage: once completely cooled, store in an airtight jar; a quick pass through the air fryer will bring back their crunch. Do not refrigerate.
