Toulouse Sausage in the Air Fryer

Four sausages, a few sprigs of rosemary in the bottom of the basket, 12 to 14 minutes at 180 °C, and not a drop of oil.

The casing tightens and browns in patches, while the juices stay locked inside. That’s the whole appeal of cooking Toulouse sausage in the air fryer : no added oil, no splatters in the drawer, and even browning from end to end. There’s just one absolute rule, and it changes everything : never pierce the casing.

What is Toulouse sausage ?

Toulouse sausage is a fresh pork sausage, neither smoked, dried, nor heavily spiced, named after Toulouse in Occitania. Its character comes down to three things : the quality of the meat, the fat content, and the casing.

The pork is coarsely ground, often through a 10 mm plate, using lean shoulder and firm fat. It contains around 28 % fat : enough to keep the meat juicy during cooking, but not so much that it turns crumbly. The natural pork casing has the spring and snap that collagen casings simply can’t match.

From Occitania to the air fryer basket

In its home region, Toulouse sausage is both an everyday meal and a cooking staple : browned in a skillet with potatoes or lentils, or simmered in cassoulet, where its fat enriches the beans and broth.

Pan-frying and slow braising render the fat gently and keep the casing supple. The air fryer works differently : hot air circulates around the sausage instead of pressing it against a searing-hot surface. The result is more even browning, with less smoke and fewer splatters, as long as you manage the drippings.

4 sausages, about 200 g each. That size determines the cooking time : 12 to 14 minutes at 180 °C, enough for the meat to cook through while the casing browns and tightens. Any thinner, and they dry out before they have time to color properly.

Place the fresh rosemary sprigs in the bottom of the basket, under the sausages, so they perfume the meat from below as it cooks. Serve the mustard at the table : its sharpness cuts through the richness. Dijon offers the cleanest contrast.

Technical notes

Preheat for 3 minutes at 180 °C. The immediate heat firms up the casing before moisture can escape.

Never pierce the casing. One small hole is enough for the fat to run out, the meat to dry out, and the sausage to wrinkle.

Arrange the sausages flat in a single layer, leaving space between each one. If two sausages touch, they trap steam where they meet and leave a pale, soft patch.

Cook for 12 to 14 minutes, turning once with tongs after 6 to 7 minutes. Don’t rely on color alone : check the thickest part with an instant-read thermometer. Aim for at least 70 °C, ideally 75 °C. If needed, add 2 minutes more, without going above 200 °C.

To limit smoke in a drawer-style air fryer : place a slice of bread in the drip tray to absorb the rendered fat. A splash of water works too, but use only a little, or the steam will prevent browning.

Let the sausages rest for 2 minutes outside the basket before serving : the juices redistribute and the casing keeps its bite. Plan on 5 minutes of prep and 12 to 14 minutes of cooking, for less than 20 minutes total.

  • Take the sausages out of the refrigerator while the air fryer preheats.

  • Preheat the air fryer to 180 °C for 3 minutes.

Air frying

  • Arrange the sausages in the basket in a single layer, without letting them touch.
  • Cook at 180 °C for 12 to 14 minutes.
  • Turn the sausages with tongs halfway through cooking, after 6 to 7 minutes.
  • Check that the casings are evenly golden and slightly taut, with darker spots on the sides.
  • Check the internal temperature: at least 70 °C, ideally 75 °C, in the center of the thickest part.
  • Continue cooking for 2 more minutes if needed, if the color or internal temperature is not sufficient, without exceeding 200 °C.

To finish

  • Let the sausages rest for 2 minutes outside the basket.
  • Serve with mustard.

Notes

Tips
  • Never prick a Toulouse sausage, before or during cooking: the fat needs to stay inside to keep it juicy.
  • Turn them with tongs, never with a fork.
  • Preheating is recommended: 3 minutes at 180 °C helps sear the surface as soon as the sausages go in.
  • A reliable guide: the internal temperature should be at least 70 °C, ideally 75 °C.
  • Cook in a single layer, with space between the sausages.
  • Resting: 2 minutes is enough to let the juices redistribute.
  • From frozen: cook for 18 to 20 minutes at 180 °C, turning halfway through.
  • No oil needed: the sausages cook in their own fat.
