Preparation
Take the sausages out of the refrigerator while the air fryer preheats.

Do not prick the casings.
Place the rosemary sprigs in the bottom of the basket.

Preheat the air fryer to 180 °C for 3 minutes.
Air frying
Arrange the sausages in the basket in a single layer, without letting them touch.
Cook at 180 °C for 12 to 14 minutes.
Turn the sausages with tongs halfway through cooking, after 6 to 7 minutes.
Check that the casings are evenly golden and slightly taut, with darker spots on the sides.
Check the internal temperature: at least 70 °C, ideally 75 °C, in the center of the thickest part.
Continue cooking for 2 more minutes if needed, if the color or internal temperature is not sufficient, without exceeding 200 °C.
To finish
Let the sausages rest for 2 minutes outside the basket.
Serve with mustard.

Notes
Tips
Never prick a Toulouse sausage, before or during cooking: the fat needs to stay inside to keep it juicy.
Turn them with tongs, never with a fork.
Preheating is recommended: 3 minutes at 180 °C helps sear the surface as soon as the sausages go in.
A reliable guide: the internal temperature should be at least 70 °C, ideally 75 °C.
Cook in a single layer, with space between the sausages.
Resting: 2 minutes is enough to let the juices redistribute.
From frozen: cook for 18 to 20 minutes at 180 °C, turning halfway through.
No oil needed: the sausages cook in their own fat.
