Black Sesame Cakes with Matcha Glaze

Ingredients

Black Sesame Paste

  • 10 tbsp black sesame seeds
  • 3 tbsp honey

Matcha Glaze

  • 150 g white chocolate
  • 1 tsp matcha
  • 50 g butter

Cakes

  • 100 g black sesame paste
  • 100 g plain yogurt
  • 80 g sugar
  • 2 eggs
  • 160 g wheat flour
  • 1 tsp baking powder
  • 1 teaspoon activated charcoal

Instructions

Black Sesame Paste

  • Blend the ingredients until smooth.

Cakes

  • Preheat your oven to 180°C.
  • In a bowl, add the ingredients one at a time in the order listed above, mixing well.
  • Butter and flour the ring molds. Set them on a baking sheet lined with parchment. Divide the batter evenly among the molds.
  • Bake for about 20 minutes, checking doneness with a knife.
  • Unmold and let cool. Trim the tops of the cakes so the surfaces are flat.

Glaze

  • Melt the white chocolate and butter in a bain-marie (double boiler). When almost melted, add the matcha and whisk until smooth.
  • Glaze the tops of the cakes and let set.
