Its success comes down to three things: the bread, the filling, and the spread. The filling brings substance, texture, and flavor, with tenderness, umami, and creaminess depending on the vegetables you use. The caramelized onions tie the flavors together and add deeper savoriness.
The spread does more than add flavor. It also helps hold the bread and filling together, so it needs both a good texture and a clean, balanced taste. Crème fraîche, or its plant-based version Dream Fraiche, spreads easily between the layers, and its tangy, creamy flavor pairs beautifully with eggplant, roasted tomatoes, and avocado. It has a texture and taste very close to classic crème fraîche.
The Main Ingredients
Gluten-free bread comes first. Choose a good loaf before you think about anything else, because it determines the sandwich’s structure and texture. Go for a loaf that’s fairly firm, not too soft, so it can hold the filling without collapsing.
Homemade gluten-free, lactose-free bread works well, but a good store-bought gluten-free loaf will do the job too. An artisanal no-knead gluten-free bread is another great option.
The plant-based crème fraîche ties all the layers together. Look for one that’s lactose-free, but also gluten-free, nut-free, and soy-free if you’re cooking around those restrictions. If you can’t find one, substitute vegan mayo or a plant-based cream cheese. Dream Fraiche is the recommended option, with a texture and flavor close to classic crème fraîche.
On the vegetable side, roasted eggplant and roasted cherry tomatoes, seasoned with olive oil and dried basil, make an especially good filling. Avocado adds gentle richness and freshness. The caramelized onions bring a deeper umami note and tie everything together.

Tips and Pitfalls to Avoid
Assembly is straightforward, but a few details make all the difference in the final result. Follow them and you’ll end up with a sandwich that holds together neatly, with distinct layers, rather than a stack that slides apart on the first bite.
Preparing and Roasting the Vegetables
Slice the eggplant thinly so it roasts quickly and fits easily into the sandwich. Halve the cherry tomatoes, then arrange everything on a baking sheet before seasoning. Add salt, pepper, a light drizzle of olive oil, and dried basil.
Roast in a preheated 180°C oven for 20 to 25 minutes. Don’t rely on the timer alone: the eggplant should be golden and tender, and the tomatoes should be blistered. Once they’re done, set the vegetables aside before assembling the sandwich.
Caramelizing the Onions Properly
Thinly slice the onions. Heat a pan over medium heat before adding the olive oil, onions, and salt. In other words, the salt goes in right from the start with the onions.
Then cook them slowly for 20 to 30 minutes, stirring from time to time. Look for the right color and aroma: they should be nicely golden, with a sweet, pronounced fragrance. Once they’re ready, set them aside.
Seasoning the Cream and Choosing the Right Base
Mix the crème fraîche with freshly ground black pepper and a pinch of salt until smooth and evenly combined. Taste and adjust the seasoning to your liking. This step matters, because the spread should taste good on its own while still being soft enough to spread between the layers.
Before assembling, brush the gluten-free bread slices with olive oil and dried basil. Toast them lightly, either in a pan or in a toaster. You just want to firm them up a bit, not dry them out.
Assembling the Sandwich so It Doesn’t Fall Apart
Spread a generous layer of seasoned cream on one side of each slice. On the other slice, arrange the fillings in this order: avocado, roasted eggplant, then roasted cherry tomatoes. This order helps keep the structure even.
Add a little extra crème fraîche between the layers if needed. It helps hold the filling in place, not just add flavor. Then spread the caramelized onions evenly over the tomatoes.
Finally, top with the second slice, spread side down. If you rush this step, the layers will shift and the tomatoes will slide out the sides. With bread that’s firm enough, a well-distributed spread, and a light toast, the sandwich stays far more stable.
