Stir-fried noodles with vegetables

Ingredients

  • 300 g of pre-cooked noodles
  • 1 handful of bean sprouts
  • 1 sliced onion
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 tablespoon of white part of spring onions, minced and separated from the green parts, sliced
  • 5 leaves of Chinese cabbage, white and green parts separated and cut into strips
  • vegetable oil for stir-frying

SAUCE

  • 0.5 tablespoon of hoisin sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons cornstarch
  • 0.5 teaspoon of salt
  • 1 tablespoon sesame oil

Instructions

  • In a bowl, prepare the sauce and cook the noodles
  • Heat oil in a wok over high heat and add garlic/ginger/white parts of spring onions
  • As soon as it browns, add onions, white parts of cabbage, bean sprouts
  • Once they have sweated, add the green parts of the cabbage and the green parts of the spring onions and stir-fry for another 3 minutes.
  • Add the noodles and sauce and stir-fry for a good 5 minutes or until the sauce evaporates and the whole dish is nicely browned

    Made this tonight and swapped the bean sprouts for sliced bell pepper since that’s what I had on hand. Let it stir-fry an extra minute at the end to get more browning, and it turned out even better 😋
