  • Marinate the chicken for 1 hour with the garlic, Shaoxing wine, and salt.
    400 g diced chicken, 5 cloves garlic, minced, 5 tablespoons Shaoxing wine, 1 teaspoon salt
  • Heat the oil to 170°C.
  • Add the cornstarch and baking powder to the chicken and toss to coat.
    6 tablespoons cornstarch, 2 teaspoons baking powder
  • Fry the chicken pieces once, let them rest, then fry them a second time.
  • Serve with mayonnaise or your favorite sauce.
