Samosas are one of my favorite things to make: they’re ridiculously easy and quick, and they always wow guests when you serve them homemade from scratch. The air fryer makes them even better.
Originally from India, they also appear in many Caribbean and Creole cuisines. From Mauritius to Guadeloupe, samosas delight taste buds around the world, and I absolutely love them.

Tips for Air Fryer Samosas
Make the filling a day ahead and refrigerate it so the aromatics can meld; the result will be even better. I don’t recommend folding the samosas the day before, though, as the moist filling can soften and tear the wrappers.
The sauce is great in plenty of other dishes, such as my delicious crispy chicken fritters with sweet-and-sour sauce.
The best part of using an air fryer is that, honestly, there’s hardly any cleanup with this recipe.

- 10 brik pastry sheets, cut lengthwise into 3 strips
Filling
- 250 g ground chicken
- 3 red chilies, thinly sliced
- 5 scallions, thinly sliced
- pinch salt
- pinch pepper
- 1.5 tablespoons light soy sauce
- 1.5 tablespoons potato starch
Sweet and Sour Sauce
- 100 g sugar
- 100 g ketchup
- 60 g rice vinegar
- 2 tablespoons water
- 2 tablespoons cornstarch
Instructions
Samosas
- Mix the filling ingredients.
- Fold the samosas as shown in the video.
- Place the samosas in your air fryer basket and brush with a little oil.
- Fry at 180 degrees for 6 minutes in "Air Fry" mode.
- Flip, brush, and cook for another 6 minutes.
Sauce
- Combine all sauce ingredients in a saucepan over medium-high heat.
- Cook, stirring constantly, until thickened.
