The main ingredients in mango chicken

Light soy sauce: light soy sauce is added to the marinade for a salty umami kick. Its natural enzymes also help tenderize the meat.

Cornstarch: cornstarch coats the chicken, forming a light layer that locks in moisture during cooking and yields a tender, juicy texture.

Ingredients

  • 350 g sliced chicken
  • 0.5 medium green bell pepper, sliced
  • 0.5 medium red bell pepper, sliced
  • 1 tablespoon of grated ginger
  • 1 teaspoon minced garlic
  • 1 large shallot, minced
  • 2 large mangoes, peeled, pitted, thinly sliced

MARINADE

  • 1.5 teaspoons light soy sauce
  • 0.25 teaspoon salt
  • 1 Pinch white pepper
  • 1 teaspoon cornstarch

SAUCE

  • 2 teaspoons rice vinegar
  • 1.5 teaspoons ketchup
  • 1.5 teaspoons sugar
  • 2 tablespoons water

Instructions

  • Marinate the chicken for 30 minutes
  • Combine the sauce in a bowl
  • In a wok over high heat, stir-fry the chicken for 3 min or until opaque
  • Add all the remaining ingredients (except the mangoes) and stir-fry for 1 min.
  • Pour in the sauce and toss until thickened
  • Add the mangoes and toss for 1 min
