A delicious recipe for Chinese stir-fried noodles well flavored with garlic
Originating from Chinese cuisine, this is one of the basic noodle recipes there. Even more basic than my scallion oil.
The procedure is relatively simple. We start by cooking the noodles of your choice, then set them aside. Then, I strongly advise preparing the few vegetables/aromatics in advance: as it’s a stir-fry dish, once you start cooking it can go very quickly and you wouldn’t want to burn such a delicious dish.
Still with the idea of having everything “ready” before cooking, we mix the sauce ingredients in advance, because if you have to start opening each individual bottle and pouring while cooking, 100% of the time it will burn.
In short, it’s quick, less elaborate than vegetable noodles and it’s as good as it is easy. What more could you ask for?
The ingredients for Chinese garlic noodles
Light and dark soy sauce: The two are indeed different and each has its role to play in the taste of the dish. For your information, light soy sauce is the salty sauce found in all stores, even Western ones.

Sesame oil: Be careful to respect the quantities, especially if it’s toasted sesame oil because its taste is very powerful and can quickly overpower the rest of the ingredients. Well, if you’re addicted to sesame, I’m nobody to judge.
Oyster sauce: same as sesame oil, don’t overuse it, it can make the dish very very salty. However, it is essential and no, it doesn’t taste like oyster
Sugar: yes yes, I know. Sugar is baaad. Well, it doesn’t just add calories but brings a lot of flavor in the sense that it balances the flavors of the dish.
Not only that, but it will help the sauce adhere to the noodles by caramelizing as it reduces. In short, it acts on both taste and texture so don’t neglect it!
Chinese Garlic Noodles

- 200 g of pre-cooked noodles
- 5 cloves of garlic minced
- 3 stems of green onions minced
Sauce
- 1 tablespoon powdered sugar
- 2 teaspoons of oyster sauce
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sesame oil
Procédé
