A future version of my tteokbokki will come with cheese. But in the meantime, I offer you this lovely little Korean-inspired recipe that is not only quick but really, really simple to make.
The ingredients for spicy cheesy noodles
Gochujang: Korean red chili paste, it’s clearly one of my favorite condiments. It’s essential for the taste of this recipe. (And you can learn more about it here)
Light soy sauce: This is the ordinary salty soy sauce from the supermarket. Don’t confuse it with dark soy sauce.
Cheddar: Pleeeaaaase take the time to buy block cheddar and not the plastic sold in slices. It’s so much better. Well, it will still be good and cheaper, but you’re paying (a little) with your health. And yes, I’m aware that the only vegetables in the recipe are the green onions. Oops.
Sesame oil: It’s delicious, you want to add spoonful after spoonful (especially toasted sesame oil) but no, it can ruin the recipe so be careful!
Ingredients
- 200 g of pre-cooked noodles
- 2 minced garlic cloves
- 100 g of cheddar (or other cheese according to your taste)
Sauce
- 1 tablespoon of gochujang
- 1 tablespoon powdered sugar
- 2 tablespoons water
- 1 tablespoon light soy sauce
- 1 teaspoon sesame oil
Procédé
- Sauté the garlic for 2-3 min over medium-high heat
- Add the gochujang. Mix
- Add the rest of the sauce ingredients
- Let it reduce for 1 min
- Add the noodles, mix for 1 min
- Add the cheese and mix until melted
