Don’t stress, prepare everything in advance (the sauce, that is). Then, be patient to allow caramelization to occur when covering the chicken, same for the initial “searing”. You need to be patient on each side to ensure it browns well.

  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 0.5 tablespoon of oyster sauce
  • 2 tablespoons of sugar
