Peanut sauce noodles are a staple in Chinese cuisine as well as in Thai, Vietnamese, and Indonesian cooking. In short, Asians love them, and so do we!
Today we’re making an ultra-quick version for those days when you just can’t be bothered.
Ingredients for Quick Peanut Sauce Noodles
Light soy sauce: It’s the regular salty soy sauce you’ll find in any store. Do not confuse it with dark soy sauce.
Sesame oil: Use either toasted or regular sesame oil, but add it sparingly because the flavor can quickly overpower the dish.
Rice vinegar: White rice vinegar is best, but regular white vinegar also works; the difference in taste is minimal.
Tips for making Quick Peanut Sauce Noodles
If the sauce seems too thick, add water at any point until you reach the consistency you prefer.
You can use any type of noodles for this recipe, from Japanese udon to Thai rice noodles.
Ingredients
- 250 g pre-cooked noodles
- 4 minced garlic cloves
- 1 tablespoon grated ginger
Sauce
- 6 tablespoons creamy peanut butter (i.e., no chunks)
- 2 tablespoons light soy sauce
- 0.5 tablespoon rice vinegar
- 0.5 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon curry powder
- 6 tablespoons hot water
Procédé
- In a little oil, sauté the garlic for 2 minutes over medium-high heat
- Add the ginger and sauté for 1 minute
- Add the sauce ingredients, starting with the water and peanut butter. Cook for 1 minute
- Add the noodles and toss
- Garnish with green onions and sesame seeds
