This time we’re exploring Japanese cuisine with miso noodles! A homemade miso recipe will be coming soon but in the meantime, don’t worry about using store-bought miso paste. It will still be delicious!

The main ingredients for miso noodles

Dark and light soy sauce: Both are essential, in the worst case use only light soy sauce but you’ll lose out on flavor

White rice vinegar: This Asian vinegar has a really distinctive taste, but you can substitute it with ordinary white vinegar. Otherwise, it can be found in all supermarkets with a sushi section.

Sesame oil: As usual, especially if it’s toasted sesame oil, be sure to respect the quantities

White miso: Just like with sesame oil, don’t overuse it. If you have some left, don’t hesitate to make yourself a good miso soup

Ingredients

  • 200 g of pre-cooked noodles
  • 6 minced garlic cloves

Sauce

  • 2 tablespoons of white miso
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon of white rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon of hot water

Instructions

  • In a small bowl, mix the sauce
  • Brown the garlic over medium-high heat in a little oil
  • Add the noodles and mix for 1 min
  • Add the sauce, mix for 1-2 min
  • Garnish with green onions

    Not much of a cook, but these miso noodles turned out way better than I expected and the sauce was so easy to mix up. Feeling oddly proud that I didn’t mess up the garlic and everything tasted really balanced 🙂

    Wasn’t sure white miso with both dark and light soy plus vinegar wouldn’t taste too salty or sharp, but the balance is spot on once it hits the hot noodles and garlic; making it again for an easy lunch 😋

    Made these miso noodles tonight and swapped the white rice vinegar for regular white vinegar since that’s what I had. Let the sauce cook with the noodles for an extra minute so it clung better, and the result was still fantastic 😊

    Made these miso noodles for a quick lunch and they tasted as good as, if not better than, the version from my local Japanese restaurant 😋 The garlic and miso-sesame sauce were so flavorful and perfectly balanced.
