Who would have thought that peanuts could truly transform a bowl of noodles into a dish full of flavors? Mix them with soy sauce, tomatoes, curry, and honey for a simple yet hearty meal ready in 10 minutes if you’ve already prepared the satay paste.

These noodles are among the quickest dinners you can prepare on a busy day. You can even prepare the sauce in advance and store it in the fridge for two weeks. In short, this classic of Chinese cuisine is unbeatable.

How to make satay sauce?

To make the Asian peanut sauce, you’ll need soy sauce (I always use light soy sauce for this), honey, tomatoes, curry paste (or curry powder), you can also add sesame oil. Obviously, you’ll also need peanut butter.

You cook all of this on low heat and voila, it’s ready!

You can store it in the refrigerator to use later (don’t forget to mix it well before using) or pour it over hot noodles and mix.

The main ingredients of satay noodles

Light soy sauce: Already mentioned above, this is the classic salty soy sauce that can be found everywhere

Curry powder: Use any curry powder. Personally, I’m fond of Thai red curry powder

Fish sauce: Optional, add a little at the end instead of salt

Peanut paste: Ideally, use one without added sugar. Otherwise, reduce the amount of honey in the recipe a bit

Ingredients

Satay paste

  • 3 cherry tomatoes crushed
  • 2 tablespoons of peanut butter
  • 1.5 tablespoons of honey
  • 1 tablespoon of curry powder
  • 2 tablespoons of light soy sauce
  • 2 tablespoons of peanut oil

Noodles

  • 300 g noodles dry weight, pre-cooked
  • 1 onion sliced
  • 3 leaves of Chinese cabbage white parts finely sliced and green parts roughly chopped

Procédé

  • In a small covered saucepan, mix all the paste ingredients, simmer for 10 minutes over medium-high heat with the lid on
    3 cherry tomatoes, 2 tablespoons of peanut butter, 1.5 tablespoons of honey, 1 tablespoon of curry powder, 2 tablespoons of light soy sauce, 2 tablespoons of peanut oil
  • Mix well and return to the heat for 10 minutes. After that, set aside
  • In a wok with a base of oil over high heat, stir-fry onions and white parts of the cabbage for 5 minutes
    3 leaves of Chinese cabbage, 1 onion
  • Add the green part of the cabbage
  • Add the noodles, mix well and add the satay paste: Mix well for 5 minutes and season with salt to taste
    300 g noodles

Notes

Add a little chili powder for extra kick
