To thicken the sauce

or cornstarch

Procédé
Cut the cabbage into bite-size pieces.
Place a wok or large skillet over high heat and let it heat for 1 minute.
Meanwhile, whisk the starch and water together in a small bowl to make a slurry.
1 tablespoon potato starch,

When the wok is hot, add the oil and swirl to coat the surface evenly.
2 tablespoons neutral oil
Stir-fry the cabbage for 4–5 minutes.
450 g Chinese cabbage
Add the oyster sauce, soy sauce, and garlic; stir-fry for 1 minute.

2 tablespoons oyster sauce,
1 tablespoon light soy sauce
Pour in the slurry and cook, stirring, for about 1 minute until the sauce thickens.
Drizzle in the sesame oil, toss to coat, and turn off the heat.
1 tablespoon sesame oil
Season with salt and white pepper, scatter over the sesame seeds, and serve immediately.

Don’t overcrowd the wok—too much cabbage will steam instead of sear.
