Use only the leaves. Save the stems for the marinade

Instructions for the pork
Mix the marinade ingredients in a bowl
Marinate the meat for 20 minutes
Preheat the pan over medium-high heat with a thin layer of oil
Cook the pork on both sides until fully cooked and slightly charred, about 5 min per side
Let it rest before slicing it into thin strips
Instructions for the salad
In a dry pan, toast the raw sticky rice until golden
Remove the toasted sticky rice from the pan and use a mortar and pestle to grind it
Thinly slice the red onion into half-moons
Wash and roughly chop the mint and coriander leaves
Slice the green onions
Instructions for the dressing
Combine all the ingredients in a bowl
Adjust the flavours to taste
Assembling the salad
In a large bowl, mix everything together, adding the coriander, mint, green and red onions
Transfer to a large platter and serve
Notes
Crushed peanuts go very well with this dish
Feel free to make the same dish with other meats such as chicken or beef
