Prepare the batter, dip the chicken pieces in it
1 portion my universal batter,
500 g chicken
First, fry the chicken in oil at 190 degrees (375F) until lightly golden.
Set aside for 5 minutes and fry a second time until golden
In a bowl, mix the sauce ingredients
100 g granulated sugar,
60 g rice vinegar,
60 g ketchup,
2 tablespoons cornstarch,
2 tablespoons water
In a wok, stir-fry the garlic over medium heat for 3 minutes, pour in the sauce and stir constantly until thickened

Lower the heat and add the chicken, mixing gently
